R13 has me salivating. Not sure if I want blue cheese in salad AND blue cheese dressing. I love blue cheese but may be too much of a good thing.

Broccoli Salad is delicious, much better than it sounds.

Iceberg lettuce has basically no nutrition. Just water and some fiber. Even Romaine lettuce is better.
I prefer arugula and Lacinato kale. I make my own nutritious salad adding seedless cucumber, tomato, sliced pepper, red onions, radishes, shredded carrots, microgreens, red cabbage, and top it off with artichokes, olives and a few cubes of vegan cheese. I usually use my own fresh tahini dressing. I also have a side of sardines for protein.

A base of spinach and baby greens, with red onion, cherry tomatoes, and goat cheese, dressed with a raspberry vinaigrette. Throw in some grilled chicken to make it a meal.

R16, I make a blue cheese vinaigrette that gives you the blue cheese but it lighter than a rich blue cheese dressing.

While I agree that iceberg lettuce has very little nutrition, it has the most satisfying crunch of any lettuce variety. But these days it's sold very often in a "garden salad" bag, premixed with slivered carrots and red cabbage. Those are both packed with nutrients, and the mix is the least expensive of lettuce mixes sold in bags, so I use it a lot. If I want even more nutrition, I'll toss in some spinach leaves too. I live by myself now, so I don't bother to buy heads of romaine and a bunch of other types of raw vegetables just to make myself a salad. However, I do make a lot of cooked vegetables, mostly stir fried, and I will toss lettuce into a stir fry anytime - right at the end, because lettuce cooks so quickly and will lose its crunch almost immediately.
But if anyone else is making a fancy salad, and invites me over to join in, I love nearly every kind - from 3 bean salad and potato salad, to a fancy spring baby greens salad with fresh raspberries. Salade Nicoise - yum. Greek, delicious. But people sneak slivers of red onion into EVERYTHING, and raw onions are basically poison to me, so I spend a lot of time picking onion out of salads when I eat salads away from home.

Potatoe salad from Gelson’s, but I can’t buy it on food stamps!

R21 Romaine lettuce is actually one of the most nutritionally dense lettuces there are.
And iceberg isn't completely devoid of nutritional value. It has high amounts of vitamins A and K and also has Vitamin C and Folate.
Spinach, by the way, is not meant to be eaten raw (like kale and mustard greens) because of the high amount oxalates.

I make a simple salad almost every day at lunch comprised of Romaine lettuce, cucumber, onion, radish, and instead of those horrible grocery store tomatoes I slice up some yellow squash. I dress it with either my own homemade Ranch dressing, Russian dressing, or Blue Cheese dressing.
