What's for dinner on this snowy night?

I hope those of you caught in the clutches of Blair have plenty to eat. I made BBQ chicken, roasted rosemary potatoes, corn souffle, and caramel nut brownies for dessert. In hard times a fat whore has to rejoice.

I had a big baked potato. With crushed garlic, grated Parmesan cheese and butter (actually Benecol veggie stuff).

And a couple glasses of wine.

I made a big batch of sausage and shrimp gumbo with cornbread, and made extra roux to darken a little later in the month for some crawfish étouffée because that's how lazy I am.

Tonight is chili, cornbread, and a tossed salad with a spinach base.

I got some frozen chicken tenders and cooked them in the air fryer. I made a sauce with a cup of Franks and a stick of butter, melted. Tossed the tenders in the sauce and squirted some Ken's chunky bleu cheese dressing on it.....lots of S&P - delish
