I think OP is talking about the encrypted text messaging platform (blue) v the old, unencrypted SMS platform (green). I'm speaking as an Android user so I don't know what goes on with Apple as far as the chat bubble colours go.
The former is called RCS messaging and allows for end to end encryption and other chat like features (most of which I have turned off, like read receipts and revealing when I'm typing an answer in real time).
I recently switched over due to the encryption aspect as it's obviously safer. But other than that, I could care less. And I only use it bc most of my local contacts do not use WhatsApp and other such apps.
