Simple casserole ideas
Winter is in the air and that's when I tend to make casseroles and with having my second job I suspect that I will make them even more frequently.
What are your favorite simple casseroles recipes? By simple I just mean I don't want to have to brown anything or use multiple pots- that's not my idea of a casserole.
My go to is layering:
cut chicken breast
quinoa
a ton of spinach
feta
add a lot of lemon juice, garlic, water and a few pats of butter. Bake, top with a bit of shredded mozzarella a few minutes before taking out of the oven.

Not exactly simple but I love Love LOVE a good shepherd's pie when the cold northern weather comes in. You can go foofy culinary with it (chopping fresh produce, etc) but the quick n' easy recipes out there are still tasty. Here's one.

I'm also into chicken veg noodle casserole, basically tuna noodle casserole with the gravy and curly egg noodles, but swap in chicken breast cooked tender. And adding more veggies and sliced mushrooms. Lasts for days in the fridge and doesn't stink up the joint at work like reheated tuna casserole does.

Love this. I hadn't had tuna casserole in... 40 years or so. A few months ago I had a sudden urge for it. I didn't know how to make it but I just used shell pasta, canned tuna, frozen peas (added close to the end of cooking), parmesan, canned cream of mushroom soup and chives. I can't tell you how satisfying it was although the idea of it kimd of turned my stomach later weirdly.

Cook 2 lbs ground beef in pan, remove oil with strainer or paper towel, add to large bowl. Cook one onion chopped finely in a tsp or two of oil until soft, add to the bowl. Add 2 cans of tomato soup, 1Tbsp of ketchup, 1 tsp salt, 1/2 tsp pepper, 1 cup frozen corn. Mix well. Boil 2 cups of flat egg noodles in salted water until mostly cooked. Add to bowl. Mix for a minute or two. Place in a casserole. Top with grated cheddar cheese. Bake in a 350 degree oven until cheese is slightly browned. Let sit until cool enough to eat and dish it out.

Hi, OP! A healthy and filling casserole I like is sweet potato casserole. Just bake 4-5 red garnet sweet potatoes until they're soft; peel off the jackets and mash the potatoes; add walnuts, raisins, a bit of salt, brown sugar, and cinnamon, then top with a layer of plant-based cheese, such as Viola Cheddar. Bake another 5 minutes until the cheese melts. Let cool for 5 minutes.
It's pretty good and will make about 5 servings.

Here's the simplest Ratatouille I can find, made on a sheet pan. The recipe doesn't mention it, but I add chopped mint leaves and feta cheese.

Rescue Chick, seems like the quinoa would need a lot of cooking and a pre-soak, at least. I'm surprised you put it in, uncooked / dry. It also needs rinsing, too, right? Anyway, I'll defer to your judgment on this.

there is water and lemon juice in it and the spinach and chicken both have moisture. I don't rinse the quinoa (I didn't know you were supposed to when I first cooked it and now I don't care that much). the quinoa takes as long as the chicken breast does to cook.

Yum, a good casserole IMO is one with some tasty boneless chicken thighs, potatoes, carrots, mushrooms, and some good wine, gravy and butter as ingredients. :)

I followed this recipe to a T a couple months ago and it was OUT OF THIS WORLD amazing. It uses shredded rotisserie chicken and pre-made puff pastry/pie crust to cut down on time. If you have an air fryer to pop it into instead of the oven the whole thing takes under an hour, prep to finish.
FYI, I just laid the whole puff pastry over top instead of that bizarre patchwork deal because...who would want less puff pastry when then there is an option for more puff pastry?

I'm not the poster you're addressing but that's the term the recipe used. Mirliton is what they're called in Louisiana, but the recipe also tells you "chayote" in parentheses. It's not that difficult.

Yes to the pot pie, quiche and tuna casserole. Everything else is a maybe since I didn't grow up with casseoles or hot dishes. I suggest lasagna, chicken enchiladas with green chile or mole sauce, mousaka, pastitsio, strata for brunch and baked ziti. Portion individually and vacuum seal.

Quick, easy, delicious. I've made this many, many times.
Cut up chicken, potatoes, chicken broth, lemon juice, olive oil, garlic, seasoning.
Maybe not technically a "casserole"...

In the 70s my mom used to take a box of Uncle Ben's wild rice and pour it uncooked into a casserole dish, top with pieces of chicken (bone in) and dump a can of Campbell's cream of mushroom soup over it and bake it for an hour. We had that at least once a week when she was working full time and getting her master's degree. Also lots of beef stew and pot roast in the crockpot but you have to brown the meat for that. Although it literally takes a couple of minutes.
Most casseroles are so unhealthy and loaded with sodium but OPs sounds good (I would skip the cheese).

Instant Pot beef stew requires very little fussing and you can sear the beef in the same pot you can cook the stew.
My preference for the chicken pot pie would be to poach boneless organic chicken breasts because the quality of rotisserie chicken is so variable. You just heat them slowly in chicken stock or butter. The chicken is much more tender.
Was pleased to see no use of Campbell soup in the pot pie.
