I don't know who needs to hear this, but you don't put dark meat in chicken salad

I just ordered a chicken salad sandwich, and it has dark meat. I had to throw the sandwich out. I know this a first world problem, but really people.

I cannot eat dark meat because it has an overpowering gamey flavor that makes me hurl nearly every time, unless I can spit it out into a napkin quickly enough. It's a lifelong food prejudice that I've never been able to overcome. It's the same with giblets, offal, or organ meats. I just can't.

Chicken Salad isn't my favorite because, even if it's strictly made with white meat, there's sometimes bits of fat, skin, or gristle that I can't handle. Encountering even one of these will totally put me off the sandwich.

No, R17, I'm just the world's most finicky meat eater, and always have been. I can't help it.

I wouldn't eat chicken at all until I was in my late teens, the main issue being that it was on the bone. Boneless options were non-existent when I was a child.

No, R19. No, I don't eat any meat on the bone.

In the instance of chicken, the tissue that is in contact with the bone is stained dark, either because of blood or because it's just dark meat. Either way, it has that dark, gamey flavor and odor. Pulling the meat off the bone underscores the ligaments and cartilage attachments. It's gross. As a child, I couldn't do it - even the sight and smell of it would make me hurl.

R5 is right, it's a mixture to get the most flavor. But hey, let's turn this into the DL thread on chicken salad...have we done that in recent times?

I like it without a lot of glop, so very sparing on the mayo. I'm also fine with the yogurt substitution to lighten it up.

In addition to celery, I'm good with chopped up green apples, finely chopped nuts, grapes, or raisins.

Served on a croissant or toasted multi-grain bread with mustard on it.

I can relate OP. When I first moved to where I am, at the soft serve ice cream places they would make a chocolate shake with vanilla ice cream. I had to teach each one you make it with chocolate ice cream. They figured since they were using chocolate syrup that was how you did it. No one makes it with vanilla anymore. Go back and explain that no one makes it with dark meat so someone ordering it would expect just white meat and tell them you threw it out because you don't like dark meat or the least they should do is list it as white and dark. Can't hurt to try.

For turkey salad (mixture of white and dark meat), here's what I like:

Mayonnaise.

Salt and pepper.

Finely-cut celery. If you have the leaf part, that's even better.

Very finely cut onion (not too much).

That's all.

OP is correct. Chicken salad is properly made with chicken breast--that's white meat to you people. Almost every single recipe will call for chicken breast.

Dark meat doesn't need all that dressing up and many people don't like it as much for reasons of texture and a slightly gamier taste.

Breast meat is the best meat. This is a statement that rarely holds true, except in the case of chicken salad. Since chicken salad is served cold, chicken breast is preferable—it's got a much more pleasant mouthfeel than dark meat when eaten at lower temps.

Opinions are all over the place .. mine is that chicken thighs have the most and the best flavor, but they need to be cooked long enough so the meat glides off the bone and all those tendons aren’t rubbery.

I use a rotisserie chicken for chicken salad and I strip it all / use it all.

R85 Its funny you say that. Because in black households chicken salad does tend to be thought of that way unless one is preparing for like a big cookout or formal gathering. But generally we aren’t buying chicken breasts to cook and then make chicken salad. It’s just left over baked or rotisserie whole chickens. 🐓 , with mayo, mustard, and maybe celery or relish.
