What for dinner tonight?

I'm having a sort of Shepard's pie with a bag of Beyond Burger instead of meat. Really filling with lots of fresh mashed potatoes on top. Plus, endless glasses of white wine.

I cooked a piece of chicken in my toaster oven last night and then forgot about it for 5 or 6 hours. When I remembered it, I didn’t want to waste it, so I microwaved it for a long time to hopefully kill bacteria and then put it in the refrigerator. Will I get sick if I eat it today?

Thai green curry with shrimp. I made green curry paste yesterday, using Thai basil, Thai green chilis, lemongrass, and magrut lime, from my patio and some of the public at our condo. I also picked my first Chinese eggplant to add to the curry. Am I bragging a bit? Yes, but this is the only place I can do it. I like to grow stuff. It's the Italian in me.

Post COVID, I have parosmia. It’s a smell disorder caused by damage from the virus. The majority of all things smell foul. Just disgusting. Except milk products. I had my usual cottage cheese with canned peaches. This is 80% of my diet. Delicious!

I ordered a General Tso's chicken combo plate from a local place - white rice and an egg roll, and Pepsi. Happily, it came fast so it was still piping hot; it was tasty and the sauce was pleasant but after 5-6 pieces I was done. I know that GT chicken is breaded but this stuff was really super thick with coating and minimal meat to be found.

There is plenty left over but I really don't think these breaded lumps will taste good reheated. Dumped the remainder.

Penne with ppmodoro sauce. and a salad. I used the tomatoes I canned a few weeks aga. Yes, I've turned into my mother. She used the tomatoes we grew as did I when I grew tomatoes when I had a backyard. Now, if I find tomatoes cheap, I'll can some. A few weeks aga, I found Campari tomatoes at $.99 for a two-pound package. I bought 32 pounds and processed them. I have to say I was a little skeptical because I never tried it with this variety of tomatoes, but they came fantastic.

Yesterday, I went out for lunch and got a grilled chicken sandwich and a side salad. This thing was gigantic and could have fed 4 people. I ate half the sandwich and about half of the salad. I was uncomfortably full after that and did not have dinner or anything else yesterday.

Tonight, I disassembled the other half of the sandwich to have in the salad. I was quite shocked to see three thinly-cut chicken breasts, 4 slices of bacon and an entire avocado sliced up.

If I had somehow managed to eat the entire sandwich, I would have had six chicken breasts, two avocados and eight slices of bacon. Who eats like that? It was disgraceful.

It's cold so I made a bunch of soup. Butternut Squash soup, with fresh ginger and coconut milk, and a fabulous spicy tomato soup. Tonight I had some tomato soup with some cold rotisserie chicken. Slice of pound cake with tea later on. I put small containers of soup in the freezer . Should last me a couple of months.

We ordered Door Dash from Cheesecake Factory and it was expensive and not good. They little crab Rangoon type appetizer was tasteless and gross . The chicken a la orange was ...ok. And the other chicken dish was overcooked and terrible. Will not do that again and I am out 80 bucks!!
