Datalounge, what do you do with white mushrooms past their prime?

I don’t mean looking rotten, but just a bit bruised looking. I mostly eat mushrooms raw in salad, but til now I toss the ones looking iffy.

But I recently heard you can sautee these in butter and eat them. Does the cooking kill anything nasty in them?

Slowly sauté with butter, garlic, salt, pepper and fresh thyme. Long and slow is best to let them release their moisture. Delicious on a good chunk of sourdough.

I also only saute my mushrooms. They retain their nutrients and its best to get rid of any lingering bacteria, etc. The only time I eat raw mushrooms is they happen to be included in a salad I have at a restaurant.

Who eats raw mushrooms? It's like Styrofoam, canned mushrooms on a salad are succulent, not Styrofoam.

Yeah, just cook them. I also dont see why you cant eat them raw, sliced up.

After you cook them, you can freeze them. The stem gets a little tough, but the cap is fine.
