A question about Mac n cheese

So in couple months I will devout myself 100% to the ethical vegetarian lifestyle. Long story short, I know Imma be hungry.

Despite being a grand chef(no it’s not what I do for a living) I never really got into making Mac and cheese. So I grew up with soulfood type Mac and cheese, some call it macaroni pie—very similar to southern style in general. However I know there are many of great recipes for stove top only matching more of the European style. Home cook extraordinaires which do you prefer. Any recipe recommendations?

No reason for you to be hungry, OP. Not if you actually cook and eat food.

Stovetop mac n cheese is never as good as baked. Try using some smoked gouda in the cheese sauce, and add some thinly-sliced fresh jalapeños . Bake, then top with roasted cauliflower and bread crumbs.

I understood, OP -but in my opinion mac n cheese needs to be baked to achieve perfect flavor and texture. Stove top versions can't have a crust of browned cheese on the top...

I do a recipe loosely based on Emeril's, you do a layer of creamy mac then sprinkle with shredded cheese. Repeat a couple times. I use a lot of different cheeses. It's a good opportunity to clean out the fridge.

We hardly ever have leftovers, my partner goes crazy on this stuff. He's a Euro, but he sure has taken to American food.

Lots of great vegan mac n cheese recipes out there. Here's one. Also, try a book called Plantstrong by Rip Esselstyn, it has many excellent vegan recipes.

I've been vegan for 25 years and I can't say that I've ever been any hungrier than I was before hand. So much good vegetarian/vegan food out there now.

I like doing it carbonara style. Using eggs as an emulsifier. I mix 2 whole eggs and 2 yolks with a handful of grated cheese. Boil a pound of pasta, drain lightly, back in the pot, coat with olive oil or bacon fat, and put a bit of hot pasta in the egg mixture to temper it. Then pour the mixture into the pasta. Add 2 more handfuls of cheese and black pepper. It makes a great creamy sauce using finely grated pecorino but I'm not sure if it will work the same way with cheddar. Not a fan of roux, I think the flour dulls the flavor of everything. Not a fan of baking because the sauce always separates on me and gets greasy. If you must have a browned top, just pop it under the broiler for a minute. I've also tried it with sodium citrate which enables you make velveeta out of any cheese you want but then you would have to order that.

Your loss, R42. The bite of the jalapeño is mellowed by the smoky gouda flavor. And we are talking about one small pepper in a large dish -maybe a bit in every third bite. The crunchy cauliflower on top gives more texture/bite -not to mention upping the fiber and nutritional profile of the dish. This isn't my own creation -it's the most popular dish at a local restaurant.

I had some of the best Mac n Cheese when I was in Europe. Luxembourg as a matter of fact. So fuck off. Plus you should have seen the faces on my friends in Germany when my Rice Krispies arrived in the mail and I was able to make Rice Krispie treats. They were all over them and licking their fingers. Twenty of them were gone in about three minutes. Stop acting like Europeans all eat like they were a modern day Louis VXI.

Place precooked noodles in baking dish cut up 3/4block velvetta ,i small block colby schredded sprinkle over cheese, add milk to almost top of noodles, bake 350° for about 45 min remove foil covering dish bake until top is a nice browish color , cool a tad and serve. Northern south recipe.

OP, check out Serious Eats for various creamy stove top Mac and cheese recipes. I can’t say which one might be the best, but they get into the science of the melting, etc.

Also, it is possible to replicate sodium citrate with lemon juice and baking soda. I haven’t tried it in Mac and cheese but I have in queso and it kept everything melty.

I prefer baked mac cheese and usually add thyme or paprika (and extra mixed in the buttered breadcrumbs). It really elevates the flavor. I would try that in a stovetop batch as well.
