Totally worth making it. Store bought always tastes insipid and has WAY too much cheap tomato sauce. Lasagne is supposed to be dry NEVER “wet”.

Best method of making lasagna is to use a microwave convection oven combination! The microwaves help the egg and cheese to congeal better, the convection heat gives you an even nice brown crispy cup crust on the top.
Also add egg white to your mixture of ricotta ,parmesan, and mozzarella to keep it from weeping. I add almonds and a little smoked paprika to mine. If you're concerned about carbs use the whole wheat noodles!

There's a local Portland chef who opened a home kitchen and sells and delivers homemade pans of various lasagnas, tiramisus, and focaccias via his Instagram channel. Some of the lasagna combos work better than others, and it's not cheap, but far cheaper than eating out and lasagna can be very time intensive. I also used to whip up and freeze huge batches of oven roasted ratatouille every summer from my garden, and that made for a great vegetarian lasagna

I use full fat cottage cheese instead of ricotta. I find it results in a less dry/grainy texture.
For my meat sauce I usually swap in Jimmy Dean breakfast sausage for better flavor (and frankly, convenience).
I got served lasagna at a function a few weeks ago and the lady who made it used those no-cook noodles. I do NOT recommend, it was a total abortion.

My favorite is Marcella Hazan's Lasagne alla Bolognese, but it's a lot of work, especially if you make your own lasagne sheets. Instead, I use her recipes to make Bolognese and Besciamella sauces. I mix those with half-cooked cavatappi and a lot of Parmigiano-Reggiano and bake. No mozzarella. No ricotta. A lot less work. Almost as satisfying.

I just tried Costco Beef and Sausage Lasagna for the first time. This is a keeper. I'm not saying that I'll never make lasagna again but this will be my go to when I need easy and delicious.
