Fish n chips. I made tartar sauce last night. The other night I had nearly over-ripe tomatoes diced and marinating in a bowel with smashed garlic, olive oil, a little red wine vinegar, salt, pepper, red pepper flakes and a pinch of basil. Just got in the house after spending a few hours gardening. We are going to pick up a load of mulch in the morning and wanted to get the garden beds cleaned out of old leaves and weeds.
Don’t feel like cooking now so took some roast turkey, cornbread dressing, and gravy out of the freezer and will heat it and serve it with a salad.
I often make entrees and freeze them in rectangular glass covered dishes for nights when cooking isn’t appealing and we don’t feel like going out.

I spent most of my afternoon today making gallons of chicken stock. I freeze it by the quart and a batch usually lasts me a couple months.
Tonight I made myself a couple portions of simple chicken soup with a grilled cheese. Into some homemade stock goes a little leftover dark meat from last night’s dinner, a couple sliced carrots and rib of celery, some Manischewitz egg noodles, and lots of chopped fresh dill. 🥣🤗

You can stir fry any frozen vegetable. Heat skillet, tablespoon of oil or so,dash salt, MSG (yes it’s not poisonous); pepper. I usually throw bag of veg overnight to thaw but you don’t have to. Add to hot skillet.and shake and stir til tender.

I've been using the Pioneer Woman's chicken salad recipe for years, it's really good, includes grapes. Although, I don't particularly like her.

Cuban Chili ,my old recipe that I developed. I cut up 1 lb of thawed frozen yucca into 1-in squares and pan fry it like hash browns, I add a 1 lb package of mixed peppers and onions and saute till brown , brown 1lb of lean ground turkey and dump this insta pot with can of black beans,can of garbanzos,2 cans of whole tomatoes and one bottle of corona. Pressure cook for 20 minutes, allow pressure to drop on its own.

It is available at Publix, Target, Costco, The Fresh Market, Sprouts and Whole Foods.
The recipe is on their website and their "flagship" cheese (pricey) is also available for purchase. I did purchase the cheese years ago and made it myself and it was great but I'm just too lazy now and buy the frozen one. I find it to be well worth the price.

Tonight I'm still nursing a torn hamstring and screechingly painful trigger finger (rt ring finger that I haven't been able to open/extend in 36 hrs), so cooking is not an option. So I DoorDashed canned tuna and a 4-pack of croissants from Albertsons, and made tuna salad. Letting the seasonings meld. Will have tuna on croissant with fresh tomato slice, low-sodium Lay's potato chips. In the mood for cabernet, or a Myers rum and Diet Pepsi.

Chili bean soup using bulk pork sausage
I added in fish sauce for some bass. I also browned my tomato paste because that’s what the internets told me to do. I also tried oven roasted garlic paste from a tube (should have stuck with minced fresh garlic).
I wanted to omit the Knorr chili spice packet to avoid over salting and salt wasn’t an issue. Instead, I went a little nuts with different pepper spices that increased the heat. Next time, I’ll measure out the chili, cumin, and cayenne pepper instead of pretending I know what a teaspoon/tablespoon measurement looks like.

I'll be having a John Soules Southern Style Chicken Breast sandwich prepared in the air fryer and topped with Great Value Chicken Dipping Sauce (formerly known as "Special Sauce" but apparently McDonald's had an issue with that so they had to rename it).
Both dupes for CFA chicken sandwich and sauce without having to patronize CFA. Take that CFA!
It is a nicely flavored chicken breast and not pressed and the bun that comes with it is good unlike the bun Tyson's includes with their bland sandwiches. I microwave the bun separately rather than air fry as instructed as I like soft bun. Photo below.

Chicken salad with a salad - good tomatoes this week, and Wegman’s chocolate ice cream (which at $3.50 for 1.5 qts is $1.17 a pint.) Think about that if you’re near a Wegman’s and can eat dairy. I baked a 1 lb salmon fillet that I got for 30% off at Aldi's! Seasoned with a Mediterranean spice mix. This will be two portions that I will save one for later. I made brown rice with the same Mediterranean seasoning with a mixture of carrot juice, water and EVOO . One bag of microwave steam mixed veggies from Aldi. Very healthy and delicious! Curiously my Siamese Trixie will not touch fish but loves the brown rice.

r104, I made that recipe and mostly loved it, but husband and I thought it was too greasy, and he thought it was way too sweet. We will try it again with less of the dressing, and with a less sugary balsamic vinegar brand, or perhaps we'll use red wine vinegar. Otherwise, this is a keeper. Thank you! We actually have Haloumi cheese in the fridge (I'm Greek and Easter is this Sunday) but we didn't use it as a side dish. The fresh basil really sets this recipe off well.
I've made a dozen or two recipes taken from the DL over the years. Some of them were simply links to Ina or Chef John. Fabulous.

I had a poverty pantry clearer tonight - lentil soup made with boxed broth, tinned diced tomato, tinned white beans. Only fresh ingredients were onion, garlic, some sad looking courgettes, and a Polish sausage also nearing expiry. I gave the pot a slurp of vinegar and a glass of my Shiraz (rather than drink the entire bottle).
I’ve lots of leftovers which won’t keep particularly well. I’ll have a bowl or two tomorrow and then probably waste the rest. I can probably make a dinner tomorrow of a bowl of soup with a roasted chicken leg or fillet of turbot.

America's Test Kitchen said Gorton's were the best fish sticks and I concur. The whole filet fish sticks tied for winner with the minced fish sticks in their taste test. I got the whole filet ones.

Indeed, R219! Perhaps you’ve found it at Trader Joe’s as I did… lovely, light, complex and unique. It’s wonderful on corn - whether on the cob or freshly popped - with copious amounts of butter. It’s similar to paprika in that it can add a depth to any number of dishes and pairs especially well with white fish, especially if grilled/charred.

I got 3 wheat tortillas and I sandwiched between them some smoked ham and cheese and put them in the airfryer. Then I took them out and laddled some guac and cut up cherry tomatoes on top. It was good but would have been better if I let the tortillas crisp up even more. Also I had no hot sauce or even pepper for heat. But if I make those tweeks I'm definitely making them again.
I also made a simple salad of garbanzo beans, lemon juice, garlic, and olive oil. Very good but didn't finish it because I'm scarred it will make me too gassy.

Made easy chicken pot pie filling and served it over Pillsbury Southern Style Buttermilk Biscuits..
Filling:
Springer Mountain Farms pre-cooked, oven roasted chicken breast strips (I cut them up with kitchen shears into smaller pieces), one can cream of chicken soup, one bag thawed frozen mixed vegetables, a splash of milk, some seasoning (I like herbs de provence), mix together, bake 20-25 minutes serve over them Pillsbury open face biscuits. Somewhat trashy, mighty comforting and filling.
I usually use rotisserie chicken but stocked up on the Springer Farms chicken strips when they were on sale intending to use them for burritos which so far hasn't happened.

Going to roast a free-range, organic chicken tomorrow with rosemary, garlic cloves, and lemons, Ina Garten style. Also, tiny Yukon Gold potatoes with olive oil, S&P, rosemary, then tossed with lemon juice. Steamed green beans -- tossed with -- you guessed it -- olive oil, salt, and lemon juice. Instant Graxy from a powdered Lowrey's or McCormick's mix because making graxy is a pain in the ass. Lemon Pudding Cakes (it's a major hassle - kinda like a souffle) in ramekins for dessert. My neighbor's prolific Meyer lemon tree is spilling lemons into my yard. Gotta use them before the rats get to them.
Another neighbor has an overgrown rosemary bush in their front yard, from which I trim for cooking. Have left them trays of oatmeal raisin cookies at their doorstep for >30 years with my email address, but they've never responded. I think they might be in their 90s by now.
There's a huge difference in flavor and texture from a free-range chicken and a factory-farmed one. The price difference is well worth it. Will likely stuff the bird with sauteed onions, shrooms, celery, and Stove Top stuffing mix, with half the mix cooked on the side in foil. My partner usually does all of the cooking, but likes this meal when I do it maybe 3 times a year. Leftovers are used to make Avgolemono soup.

Something about pan drippings, separating the fat, scrapping up the bits, making a rue, and then cooking the mess over the stove in the original pan and then straining it. Seems like too much work after I've slaved in the kitchen all evening and am on my third glass of wine. Any suggestions? Can't tolerate chicken without gravy (aka "graxy" for Datalounge Eldergays).

I could eat these every day, if not for the prep work of roasting and peeling the delicate poblano pepper. I have discovered a better way to keep them intact: instead of slicing an opening in the body, I cut around the stem, pull it and the seeds out, and then stuff the pepper through that opening.

r279 I like to simmer vegetables like onion, celery, carrot etc. in chicken stock, then I puree it all together with an immersion blender and simmer it down to the right thickness, but not too much or it will get gritty. I also add some anchovies, tomato paste, and soy sauce to amp up the umami. If it's for post roast I'll replace a cup of stock with red wine. I find the flour in the roux dulls the flavor and I have to add a bunch of salt to compensate.

Today I did yet another Ina's roast chicken, this time stuffed with lemons, rosemary, and garlic. I "cheated" by using liberal sprinklings of Cavendar's Greek Seasoning -- which is laden with MSG. Again, used a Rocky free-range, organic chicken, well worth the $14. Sent plates of this wonderful chicken to two neighbors, both having health issues, with steamed string beans and tiny roasted Yukon Gold potatoes roasted with rosemary, then tossed with lemon juice, olive oil, and S&P. This is Greek comfort food. Made Cornbread muffins with a box of Jiffy mix spiked with a half can of creamed corn, and an extra egg.
Partner is having a bout with diverticulitis and is on a low-residue diet.. The goal was to make him Avgoloemono soup, but without the shredded chicken. Made stock from the carcass and bones with mire poix, chopped leeks, dill, and pepper corns; then after straining it, and cooking Arborio rice back in the broth, tempered a bowl of egg yolks, with lemon juice and cornstarch into it. We had extra shredded chicken and 7 egg whites, which my partner froze (separately). Not sure what to do with either of them.

Manwich sloppy Joe on homemade white bread I made two days ago. It seemed to turn out fine out of the oven but the next day it was hard as a rock. I used a basic recipe from Betty Crocker 1955 cookbook that had the triple proofing. Like I said it all seemed fine, rose up fine, looked like a picture perfect loaf….the next day was granite city. r306 the microwave might soften it up. What is the reason for triple proofing? I've never had bread turn hard the way old French bread does. I use basic recipes, maybe 62% water, 2% salt, 0.5% yeast. If I want really soft Wonderbread style bread I'll add milk powder and sugar and knead butter in after the initial kneading.

I made a great carbonara style pasta on the fly the other day. Boil 1 pound of penne, drain, coat in bacon fat or olive oil. In a bowl whisk together 2 whole eggs, 2 yolks and 2 handfuls of grated pecorino. Temper by adding some hot pasta into the bowl, then stir it all into the pot with the pasta. Add another couple handfuls of cheese to thicken the sauce. The sauce held up well even after being refrigerated and reheated.

I made oven baked bbq ribs today. I can’t be bothered to grill. Anyway, first time making ribs. All I can say is, the rub is important. Don’t overdo the cumin. Also, a bit of liquid smoke might have been nice since I don’t have a smoker.

R8 here.
Last Sunday I sliced and shaved some of my sister's leftover smoked brisket she made for Father's Day, and made a small-ish (just 8"x8") cottage pie.
It was absolutely delicious and went over so well, by Monday morning there was only a tiny bit left, so Monday afternoon I shaved the remainder of the smoky brisket and made a 9"x13" pan of cottage pie, and put most of it in the deep freezer.
That will be dinner this evening.
Right now I'm sipping on a strong Mai Tai, to help me soldier through my old Dad's 786th telling of some random events (both real and imagined) in his life he's conflated into one single episode, the retelling of which always makes me batty.

Sauteed Escarole and Cannellini Beans. I used a can instead of rehydrating dry beans - a time consumer. It took all of 25 minutes to make. Instead of tomato sauce, which I didn't have, I halved a handful of ripe cherry tomatoes and some white wine for liquid. Also added some crumbled leftover bacon that I had intended to use for BLT's. I barely added salt because of the bacon and the Parmesan. Partner loved it. This easy, nutritious, and cheap dish is a keeper.

No dinner for me today, we're havin' a block party. Everyone makes and/or brings all sorts of delicious things: Casseroles, sliders, pasta salads, wraps, vegetable melanges, ethnic specialties and lots of snacks(there better be some soft pretzels) and junk food. We fire up a few grills for burgers and hot dogs. My contribution is homemade Key Lime water ice(kid friendly, the adults can "enhance" as they see fit) Oy! What I went through trying to zest limes that were the size of olives!!!, and the VERY last box of Girl Scout cookies that got pushed into the Phantom Zone of my pantry.
I normally bake a dessert, cookies/cookie bars or a dump cake, but it's just too damned hot to even think of turning on the oven.
Can't wait for the Bouncy Castle to show up.😁

R456, it sounds like fun,, but I had to stop at Kroger's yesterday for eggs and they were outside cooking sausages and hotdogs and all manner of BBQ type foods on a grill. It smelled good and I wanted to try it, but I noticed the raw meats were in a regular plastic cooler on a table, and it looked sketchy. The temperature was 95 degrees yesterday. Never got below 88. I just worry because food spoils so quick when you're outdoors.

I wonder if they include some of the zest along with the juice(the bottle is opaque so you can't tell) If not, I don't feel it'd be worth it since it's the rind that gives the flavor we're looking for, as opposed to the juice which provides acidity, mainly.

Air fryed gnocchi. Yep, you heard right. Just dump uncooked gnochi in a bowl, drizzle some olive oil, grated cheese and salt, shake to cover and dump in an air fryer for 15 minutes (shaking them up halfway) and you have these crispy slightly brown on the outside,soft yet slightly chewy on the inside little potato dumplings. You can use them as regular pasta or just as appetizers. I did the latter and used some alioli as a dip. Honestly loving the discovery.

Portion it out for one serving in freezer zipper-lock bags, that way you don't have to icepick out your bowlful. When you're in the mood microwave it and make a sandwich to go with while you wait. I just improvized a delicious stew/soup of garbanzo beans, spanish chorizo and potatoes. Stuck some cut up mini potatoes in the airfryer, sauteed some cut up chorizo with garbanzo beans, added the cooked potatoes, some chicken stock, paprika and a teaspoon of flour to thicken the liquid a tad and voila...delish and very easy and fast.

I just found out that Mexican limes are the same as Key limes.
Growing up, we had what we called a Mexican lime tree in our yard. My mom would squeeze the juice on papaya, etc.
Anyway, IIRC, the tree was pretty easy to grow. I don't remember it being high-maintenance. You can use the limes on anything.

R500 - I don't have exact measurements but I'll do my best. I looked at a couple of recipes and went on my own. I had also made a small one. You really can't go wrong with good ingredients though.
1 lb ricotta cheese, drained 1 lb mascarpone cheese 1 1/4 c heavy cream divided 1 1/4 cup powdered sugar 1 tsp vanilla 1/2 tsp vanilla zest of one orange mini chocolate chips pinch of salt
Drain the ricotta for 6 hours or overnight. I put it in a fine mesh strainer over a bowl covered and put in the refrigerator. Beat ricotta, mascarpone cheese, powdered sugar, cinnamon, salt, and vanilla extract until light and fluffy Whip the heavy cream to stiff peaks. Fold in 2/3 of the cream and the orange zest into the cheese/sugar mixture
Put a layer of the Biscoff cookies in a loaf pan. Top with 1/3 of the the filling. Sprinkle with the chocolate chips. Continue layering ending with cookies. Cover and refrigerate overnight. Unmold and top with remaining whipped cream. Sprinkle some more cinnamon and some chips on top.
Let me know how it turns out. I think mine was really, really good.

Had some more of the leftover pulled pork with my 2nd favorite way to eat potatoes (after goosefat roasted), simply boiled with a generous drizzle of olive oil and salt. If a potato is good quality, it is heaven.

Sounds delicious, R501! I might play with the recipe a bit too. One version of cannoli I've had called for unsalted pistachio chunks, chocolate chips and a few drops of almond extract in addition to the vanilla. No orange flavors. So that's another variation I guess. I'm also wondering if I made the batter for cream puffs, but instead spread it out on a cookie sheet, bake then cool and slice it into two layers, add the cannoli cream, then drizzle hot fudge over the top layer. I know. THis is totally improv, right? I like what you did though.

I'll make the nuoc cham soon. The extra step that's not in the recipe is the mini egg rolls. You get them in the restaurants and I bought them already made and frozen. I have to deep fry them.

Stuffed Rainbow Trout freshly caught from a stocked reservoir where an old friend has a boat and a ton of patience.
This recipe is easy to make -- after you've cleaned the fish -- which is the most difficult part. Haven't mastered getting rid of all the bones before baking, so we'll just have to pull off the bones or peel the fish away from the bones when eating. Going to boil corn on the cob. I have a tub of coleslaw from Safeway and a loaf of sourdough French bread. Trout is really bland, IMHO, so you have to add flavor.
Partner picked a bucket of cherries today but we've just finished our first bottle of wine, so I don't think that's going anywhere tonight. Plus, we're all sunburned.

I buy angel hair coleslaw mix instead of chopping cabbage and carrots. I also use a large electric pancake griddle so I can cook everything at once.
The sugar is key as is ketchup and mayo from squeeze bottle not a jar.

Really good chicken sandwich for lazy days. A dupe for CFA sandwich without patronizing chick fil a.
Sold in Walmart frozen section and comes with a brioche bun that I microwave. The chicken filet is all white meat and I air fry it. They also have a spicy version but I haven't tried that. The chicken dipping sauce is very good and dupe for CFA sauce. I've had the Tyson frozen chicken sandwich and thought it was awful.
I also had a nectarine and Bauducco chocolate wafers.

I made a stew/soup out of garbanzo beans, spanish chorizo, potatoes, a little rice, chicken stock, some tomato puree, a generous amount of hot sauce, paprika and parsley. I had made it yesterday but it's one of those foods that is 50 times better the next day. So good!

That 70s Taco Bar! Now made for visiting vegan nephew and niece in law and for my husband on Ozempic.
Packages of hard, flat bottom corn taco shells.
Sautee 1/4 finely diced white onion in a pan with a package of ground Impossible burger with half a packet of McCormick's Taco seasoning (the whole packet would have been too salty. And it's probably loaded with MSG, which is why it's so tasty). Use two packages of Impossible burger and a whole packet of Taco Seasoning if your half-Mexican nephew and his Parisian wife are in town.
Serve on the table with bowls of chopped tomatoes, chopped iceburg lettuce (because you gotta), mashed ripe avocadoes, shredded vegan cheddar (it might as well have been just Velveeta), and a bottle of hot sauce for drizzling.
You must cram all of this into your taco shells or it will squeeze out like a mofo. All of the tacky flavors of 1970s White Peoples' Tacos (or Taco Bell) come together.
Serve with Tequilla and Diet Margarita Mix, and/or a cheap bottle of Penis Noir, and/or cold Coronas with sliced lime wedges. It's downright wacky! Madcap, even. It's a politically correct Fiesta for skinny hungry vegans and old diabetics!

I had a plate of cold salmon salad that I made last night. It was delicious. It's 11:30 at night here and the temperature is finally down to 82. I don't cook in this weather. Yes I have wonderful AC and fans, but even using my airfryer/convection oven on the counter heats up the house. It's a small apartment. And then there's the odor. So I'm cooking as little as possible.
