Perhaps not the most used, but definitely the most enjoyed.

The condiment that really sends the dish over the top.

Salt and pepper are givens.

Worcestershire sauce is made from anchovies. But I would agree that the flavor is different from Asian fish sauce.

I love Japanese seasoned rice vinegar. Marinate some raw cucumber slices in it and you have instant fresh pickles. It perks up many dishes (it's rice vinegar that has been seasoned with sugar and salt). You can cook green beans and yellow beans and add any dry bean variety (kidney, pinto, black eyed peas). Season with seasoned rice vinegar and voila- a delicious three bean salad. It's a very refreshing taste especially for cold dishes in summer time. The Japanese use it to flavor sushi rice. I also love Thai sweet chili sauce, such as Mae Ploy.

Mayonnaise is the mother sauce of the south. I love it. But I also love Heinz 57 Sauce. I make my own of both. I found the recipe for 57 Sauce years back. Actually, I think mine is better than the commercial version.
