From my waiting tables days (a million years ago):
1. Sandra Bullock: I loved her. Every time she can in we all fought to take care of her. She was the best.
2. Adam Sandler: Served him countless times and he was never not great.
3. Anthony Hopkins: Kind, gentle. I also adored his wife.
4. Al Pacino: True gentleman and also had the most natural star power I've ever been around.
5. Dennis Quaid: Great guy. I guess he went all MAGA at some point. Which is a shame.
6. Keanu. Only served him once, but he was lovely, soft spoken and a total sweetheart.

Parker Posey spent the better part of a summer filming a movie in my very unglamorous hometown. I was like 17 and working at the Gap in the mall and she would come in regularly and made a point of getting me to help her after I put together an outfit for her and guessed all her sizes right the first time she came in. I never told her that I could do all her lines from Waiting for Guffman by heart because I was convinced my first ever six dollar an hour mall job bound me to some sort of fashion professional’s code of conduct, but I think she could tell that I was a huge fanboy and couldn’t have been sweeter.

Steve Carrel. Mindy Kaling said in her book Steve won't say an unkind word about anyone. There are stories of him being very generous with his household staff, i.e. gardeners. I recall him coming to the rescue of Anne Hathaway at some movie premiere when a reporter started grilling her about her then scam artist Italian boyfriend. Steve swooped in and ended the conversation and protectively guided her away.

I was running box office for a theater in LA and Glenne Headly (John Malkovich's ex-wife) was in the cast. She was the sweetest, most generous woman. She passed away shortly after the show ended and it was a terrible shock. Many Steppenwolf alumni and her former co-stars came in. Bill Pullman, Laurie Metcalf, etc.. Most of them were nice enough but Lauren Hutton had to have been the nicest of them all. She bought a water and some chips and she asked if she could sit next to me in the box office area at a piano and we had the best conversation about anything but show business. Really down to Earth and still quite beautiful.

I’m very envious of all those lucky enough to meet the celebrities mentioned in this thread. You obviously live/work in more glamorous spheres than I do. I shared a Burger King with Jensen Button and a WH Smiths with Amy Winehouse (RIP) but I didn’t get to talk to them. Button was with an extremely beautiful woman and poor Amy was being escorted round the shop by two huge bodyguards who only made her look even thinner and smaller than she was. I felt sorry for her, as she was obviously in a terrible physical state. She died not long afterwards.
The only famous people I have met were an eighties radio DJ to whom I sold a kettle, a handful of rightwing Tories (who were not nice, but beautifully dressed and well-mannered), and Queen Elizabeth the Queen Mother who was tiny but enjoyably regal and warm. She had a surprising amount of charisma.

Tanya Tucker is a sweet lady. I chatted with her when she came to visit my college. She asked me about my studies, music, living in the dorms, etc. She said she regretted missing the experience.
Vince Gill, also nice and down to earth.
Lynda Carter, just as wonderful and pretty as you’d hope.
Richard Simmons was Richard Simmons. He chased me around telling me he needed to find the little boy’s room. When I told him how much my mother loved his show, he seemed genuinely touched. It was like being around a tornado. But a fun, kind tornado.

I’ve told this story before, but it really was a fun celeb sighting.
Sat a few seats away from Liza and Billy Stritch at some off-off Broadway show in the late1990s. I can’t even remember what the production was, but Liza was just as delightful and wonderful to be in close proximity to as all the stories I had heard. She smiled at anyone who looked her way and during intermission was friendly and talkative to everybody who approached her.
They played some disco tune in the lobby to announce the 2nd act and I remember her shaking her shoulders and doing a little shimmy as we walked back into the theatre. Go ahead and “Mary!” me and I know it probably sounds corny, but even that little action was just so charming and she radiated such a joie de vivre that you couldn’t help but feel happy just being in the same room as her.

Benjamin Bratt openly flirted with me at the Mondrian Bar. Sat next to me, struck up a convo. Introduced himself even though I knew who he was. We talked for like 10 minutes, He laughed at one point and put his hand on my knee (his hands are huge). Finished his drink, paid for mine and his, and ordered another for me, tipped the bartender very generously. Leaned in and said "Too bad i have to run" with his big hand on my knee again. Smiled and winked as he left. I was dumbstruck. The bartender looked at me and said "You should have given him your number." FUCK! This was around Dr. Strange the first movie.

For a long time in the 90s and 00s, I had a customer who was a very sought-after lighting director for concerts in the Boston, MA - Foxwoods, CT area. Whenever performers brought their tours through, he would be the one they wanted to work with.
According to him, Olivia Newton-John was the nicest performer he worked with (she used to perform at Foxwoods Casino often in the early 00s). I remember him saying she would go out of her way to greet everyone on his crew and make each one feel appreciated. She paid for all their meals and lodging if she was booked for more than one night. If she was there only for one night, she would order an Asian buffet for the crew behind stage.
According to him, Donna Summer was another kind soul who used to provide dinner for the crew at nearby restaurants in the Boston area (she was originally from Boston). He worked with Streisand during her concert tour in Boston, and said she was very nice - she was easy to work with because she knew exactly what she wanted for lighting; they just had to follow her directions. (She gave the crew tickets for their families to attend while they were working).
As for the male performers, Kenny Rogers, Garth Brooks, and Billy Idol (remember him?) scored high with him.

Worked in NYC in media for years. There are a few that really stood out as being nice. Valerie Harper, Kenneth Brannagh, Olivia Newton John,, Kim Cattrall, Billy Bob Thorton, Paul McCartney, Alec Baldwin (I know), Daniel Dady Lewis, Queen Latifah and Bill Paxton were really wonderful. Sandra Bullock was nice but weird.

I briefly saw Naomi Watts in the UK around 2002. I was checking into a hotel in Bath, and she was with the manager at the counter of the lobby, and just sort of waiting around. As I was checking in, the manager turned his attention to me and she stood there and waited politely. We made eye contact for a little while and she was GORGEOUS. Dressed in very casual winter clothing, but something that was of such exceedingly high quality it just added to her glow. I couldn't tell if she was wearing makeup but her skin was wonderful. She must have been in her early thirties at that point but looked legit like a teenager.
