Jacques Leban, rue Cambronne (15th arrondissement) is the last horse butcher in Paris. He will soon retire, without a successor. Its competitor, rue Daguerre (14th), preceded it. Half a century ago, there were nearly 300 of these artisans in the capital.

Harvard's Faculty Club had to drop it from the menu in 1985 when the chef could no longer get good horse meat from Suffolk Downs, the local race track.
On the menu in 1949: offered at lunch for 95 cents with potato, salad, and a beverage.

I remember seeing shops in small towns (long ago) with a carving of a horse’s head over the door.
