I let it defrost until you can run salt water through it to remove the giblets. Then I put carrots , celery and onion chopped in the bottom of the roasting pan and add a cup of water. Then I put the turkey in the pan and season with spices. I prefer garlic powder, paprika and seasoning salt . Then I cover with foil and put it in the oven at 275. I do this at 10 PM then night before and let it cook all night. When I wake at 6:00 AM , I uncover the turkey and if it's cooked all the way through , I turn off the oven and let it sit in the oven until the skin gets brown all over. After about an hour check on it . If it looks brown take it out of the oven and let it cool before carving.
