Ideas for Tonight’s Dinner

I’m looking for ideas for tonight’s dinner.

Last night was vegetarian/Indian food. I made chana saag (curried chickpeas & spinach, to which I added some paneer) with jasmine rice and naan.

On Sunday I made a roast chicken with roasted potatoes, green beans, and braised carrots.

Any good ideas for tonight?

Tonight for dinner I'm having my very tasty medicinal Black Bean Sweet Potato Soup- It has black beans, sweet potatoes, shitake mushrooms, leeks, onions, garlic, cumin powder and other ingredients which you liquify with an immersion blender after it's done cooking. I made this soup- really more like a stew- it's thick- in July probably and froze two or three containers of it.

Are these really your dishes Greg? Because they are all very impressive. The pot roast looks delectable. The other dishes the same and cooked to perfection. It's very high end.

You should have an Instagram. "Greg's dishes" and just a pic every few days of one of your dishes. Only your dishes and nothing else. I would look at that and I'll bet I'm not alone. That would grow an audience and could be a bit of fun.

Emerson purchased it in 1960 and used it as a dormitory until 2006.

It's a lovely building that presently contains sixteen condominium units.

These photos were not taken on table tops. Almost all of them were taken on a butcher block counter.

Hello, R119. I stick to her recipe, though I might add a bit less tomato paste.

It's not your typical pot roast flavor profile (it's not like Yankee pot roast), but it's delicious.

I replace the butternut squash, Jerusalem artichokes, and figs with more traditional vegetables like potatoes, carrots, celery, parsnips, and turnip.

I hope you'll give it a try to see if you like it and report back.

R119, the other recipe for pot roast that I like is a bit more traditional.

It is by Jacques Pépin and Julia Child, as seen on the PBS show, "Julia and Jacques Cooking at Home" filmed at Julia's residence at 103 Irving Street, Cambridge.

This recipe is also very good.

Greg, " red beans & rice recipe (if your prefer, omit the meat). Any brand red beans will do.. You do not have to soak beans overnight. Put on back of stove and let simmer (covered) all afternoon. I have mine on stove right now !

[bold] GREG’S New Orleans-Style Red Beans and Rice

Ingredients:

1 (1-pound) package Camellia Brand Red Kidney Beans 1 (32-ounce) container no-sodium chicken broth Water, as needed 1 large onion, chopped 1 bell pepper, chopped 1/2 cup chopped parsley 4 celery stalks, chopped 1-3 cloves garlic, minced 1 pound of tasso, smoked ham, or pickled pork or a large ham hock 2 bay leaves 1 teaspoon dried thyme Hot sauce to taste Creole seasoning to taste Salt and pepper to taste 6 cups white or brown rice, cooked

Preparation:

1) Rinse and sort beans. (Optional: Soak beans using your preferred method.)

2) Place beans in a large stew pot and cover with chicken broth. If needed, add fresh water so that mixture is a ratio of 1 part beans to 2 parts liquid.

3) Bring the beans to a rolling boil, then lower heat, and simmer for 1-2 hours, or until tender. Stir often, (so that beans don't stick to bottom of pot) and add water as needed.

4) Brown the meat in a skillet. Remove meat and set aside. In the drippings in skillet, sauté onions, celery, parsley and bell pepper until tender. Add the garlic and saute for 2 minutes, stirring occasionally. Add meat, sautéed vegetables, bay leaf and thyme to the beans. Water should cover all.

5) Continue to simmer for 1-3 hours, until beans are tender and creamy (continue to stir and avoid burning on bottom of pot).

6) To make creamier beans, remove 2 or 3 cups of beans from the pot, puree them with a mixer or blender, and return to pot. Add hot sauce, salt, pepper and/or Creole seasoning to taste.

7) Serve over rice.

Tonight's dinner- A container of fruit which will consist of apple, orange, some mango, blueberries, some watermelon. A plate of sliced bananas and a pear.

One hour later I shall eat two slices of Low Sodium Ezekiel bread with Organic no sugar no salt peanut butter with slices of organic strawberries.
