Modena balsamic vinegar is the only kind of vinegar I DON'T hate. All the other ones (like the yucky apple cider vinegar) smell and taste horrible to me.
Love tarragon too. I was in Georgia last year (the country, not the shithole US state) and they actually have a fizzy, tarragon-flavored drink called "tarkhuna" there. It tastes very sweet and very artificial but I couldn't get enough of it.

Aged balsamic vinegar from Italy tastes nothing like cheap balsamic vinegar. It’s not as tart. And less is more just like truffles.

I'll eat anything. The one food I always hated -- mushrooms -- I now love.
That said, I've always been kind of turned off by cantaloupe/mussmelon/honeydews. And cottage cheese grosses me out a little. But that's about it.

I love all kinds of vinegar and pretty much anything fermented, really. My biggest “yuck, can’t eat it” food is cucumber. The flavor makes me gag. Same with cantaloupe and honeydew—there is a crossover in taste from the aldehydes in each of them. My dad and brother have the same revulsion, so it must be hereditary.

Copious use of herbs in some prepared foods have spoiled herbs a bit for me. Think too much sage in turkey sausage that you taste for the next few hours, basil in mixologist cocktails and rosemary in too many crackers. No subtlety.

R11, Greg, as a child, my mom used to raise a herd of Newfoundland dogs out on Winthrop’s MA beaches, and those dogs would leave long, pearly drops of dog drool EVERYWHERE. Roommate spilled a carton of coconut water that looked just like it awhile back, no thanks!
