I especially like egg salad when I have good bread. Sometimes it’s hard to find really good bread.

I also sometimes like the add-ins. Pickles or a nice spice.

Yeah, I like it. I accidentally overcooked some boiled eggs and made egg salad with sweet pickle relish (and mayo). Really good.

You don't put a LOT, just a tiny bit. If you can blatantly taste it you've put in too much. But just a tiny bit helps deepen the flavors and makes it so much better than just mayo, salt, and pepper. (Fresh ground black pepper is a MUST).

I’m ambivalent on egg salad, but was a quick convert to fried egg salad. It sounded insane, especially using scissors to chop up the fried eggs. But if this much deliciousness is madness, so be it.

If you're gonna fry the egg, just make a fried egg sandwich. I don't like mayo that much, but it's good in a fried egg sandwich.

Soft white bread, not toasted or toasted lightly. Egg is over easy with a cracked yolk.

I love to make it, but since as a vegan I don't touch eggs (yucky) I make it with red lentils and harissa. Also, I cannot handle gluten, which is toxic, so I use garbanzo paste for the bread, seasoned with a little organic asafoetida.

I like egg salad but I'm always reminded of that scene in "The Heartbreak Kid" where the newlyweds Lila (Jeannie Berlin) and Lenny (Charles Grodin) are out having a bite to eat. He orders a burger; she orders a "double egg salad" sandwich. She really likes egg salad. She starts tucking into the sandwich and in the process gets it all over her face. Lenny watches in stunned disgust. It's a gross, funny scene.

I like to make my egg salad with Japanese 7-spice- shichimi togarashi, some very finely chopped white or brown onion, and a hint of yellow mustard, Best Foods or Kewpie mayo if I have it.

Delicious. Serve on Hawaiian bread.

R84 - This is random internet medical advice, but maybe get your gallbladder checked? I had a family member who had the same thing and it was gallstones.

Love egg salad. Bit of mayo, mustard, diced pickles. But I dont bring it in to work. Being in a confined space with the farty smell is a bit much.

I made it today, again differently: Heaping TBSP mayo, same Heaping TBSP Maille Dijon Mustard. 1/3 c. finely chopped onion, 5 eggs, black pepper -- chop hardboiled and cooled eggs in about 1/2" pieces; mix well. Serve on white Artesano bread, toasted on one side.

Delish, got a favorable reaction from family.
