You don't put a LOT, just a tiny bit. If you can blatantly taste it you've put in too much. But just a tiny bit helps deepen the flavors and makes it so much better than just mayo, salt, and pepper. (Fresh ground black pepper is a MUST).

I love to make it, but since as a vegan I don't touch eggs (yucky) I make it with red lentils and harissa. Also, I cannot handle gluten, which is toxic, so I use garbanzo paste for the bread, seasoned with a little organic asafoetida.

I like egg salad but I'm always reminded of that scene in "The Heartbreak Kid" where the newlyweds Lila (Jeannie Berlin) and Lenny (Charles Grodin) are out having a bite to eat. He orders a burger; she orders a "double egg salad" sandwich. She really likes egg salad. She starts tucking into the sandwich and in the process gets it all over her face. Lenny watches in stunned disgust. It's a gross, funny scene.

I made it today, again differently: Heaping TBSP mayo, same Heaping TBSP Maille Dijon Mustard. 1/3 c. finely chopped onion, 5 eggs, black pepper -- chop hardboiled and cooled eggs in about 1/2" pieces; mix well. Serve on white Artesano bread, toasted on one side.
Delish, got a favorable reaction from family.
