Cheese

I just got a big cheese box for an early Christmas present. I have not been much of a cheese eater in the past and wonder what kinds of cheeses are better for cooking than others. Is there some that should only eaten raw?

The cheeses in a cheese selection are usually meant for eating as is with drinks, good French bread, good crackers, and other appetizers, like sausages.
