I just got a big cheese box for an early Christmas present. I have not been much of a cheese eater in the past and wonder what kinds of cheeses are better for cooking than others. Is there some that should only eaten raw?
Just regift it Op. Just like fruitcake, pass it on. Especially, if there is a meat roll in there somewhere.

The cheeses in a cheese selection are usually meant for eating as is with drinks, good French bread, good crackers, and other appetizers, like sausages.

Op, just make some mac & cheese. You can put any cheese in there and it will taste good.

Velveeta is good hot or cold and doesn’t even need to be refrigerated!
