OP it's Americanized versions of Mexican food. Just like Chinese restaurants are Americanized versions of Chinese food. Trust me, most Americans would never eat a lot of the traditional foods made in Mexico and China. They waste little to nothing of the animals they cook in those countries.

Nah, I am white - but I am from Texas, so I take Mexican food, Mexican friends, and my Mexican dicks very seriously. Taco Bell got so expensive lately (and I am sorry, the food used to be WAY more flavorful back in the 90s), why not just get good quality street tacos instead? Taco Bell literally tastes like PLASTIC. No flavor. Used to be pretty decent for fast food - goddamn, their chicken soft tacos back in the day had lime, cilantro, perfectly moist, dripping...fuck, I'm getting a food boner. At least at a real taco vendor, you can get Mexican Coke or Jarritos instead of that nasty-ass Mountain Dew Baja Blast or what the fuck ever it is. Sheeeyit... (Although those Cinnabun thingies with the vanilla frosting inside are kinda the bomb, ngl, haha)

Taco Bell is definitely not real Mexican food.
However, it's pretty decent.
Think of it this way: people eat at McDonald's, Burger King, Sonic, Wendy's etc. You can get a better, more authentic, gourmet burger somewhere else, or even at home. But people still like to eat at these fast food places.
Same goes for Taco Bell. You can get better at a Mexican restaurant, or home made. But people still like Taco Bell or Chipotle.

I occasionally eat a Whopper or a Big Mac - the Whopper still tastes reasonably the same as when I was a teenager in the 80s. The Big Mac is both notably smaller, and blander - but itâs not as taste-free as Taco Bellâs now really awful Burrito Supreme. What was an occasional salty pleasure in the 80s/90s is truly inedible now.

Let me correct that for you, most WASPs have no idea what good food from any country tastes like. Wasps have incredibly bland tastes.
Most Italians, Hispanics, South Asians, the Chinese etc have learned how to cook ethnic foods from their respective countries because most of their older relatives were immigrants. Those receipts were passed down. My elderly aunts are all excellent cooks and bakers, they, in turn, passed those recipes down to their children.
