I make a motion to disqualify Eggs Benedict. Yes, it is American, but the individual components convey the opposite; English muffin, Canadian bacon, and Hollandaise sauce--all literally named for other countries, accurately or not. I know Canadian bacon isn't canadian, but the other 2 ingredients originate from outside the US, Hollandaise being from French cooking.
It's also more of a frou frou brunch dish ordered out, not something the average American cook is going to whip up at home first thing in the morning.
Whatever the classic American breakfast is, it includes fluffy pancakes/flapjacks, which are truly American in origin.

I don't eat breakfast on weekdays but my go to on weekends around 10:30 or 11 am is 2 eggs Sunnyside up or soft scrambled with toast, bacon or country sausage and coffee.
If I go out it's the same but with hashbrowns. If it's a nicer brunch it's eggs Benedict and mimosas. I may sub toast for biscuits and gravy.
I hate Cracker Barrel but those bitches have great biscuits.

The above, only when having breakfast out. At home, either rolled or steel cut oats, some chopped prunes(don't snicker, it's the secret to "success"), walnuts, a tsp.cinnamon and one of dark cocoa.

Grate the potato into a bowl of cold water. Drain and press to remove all the water. Place in a hot skillet with about 1/4 inch of oil. Oil should be shimmering. Flatten the potatoes with a spatula. Salt and pepper as desired. Cover and cook. When totally browned on the bottom, flip. Cook second side uncovered to desired crispiness. Do not keep turning the potatoes -lift gently to see if the first side is thoroughly cooked before you flip.

R102, it removes the starch, which is what turns gray and slimy when you cook the potato. R99 wanted to know the secret(s) of making good hash browns, and removing excess starch is one of them. The other is getting the potato as dry as you possibly can. I usually place my drained, grated potato on a towel and then roll/squeeze so the towel soaks up as much of the water as possible. Yes, it's a pain, but it only takes a minute -and the results are well worth the effort.

Russet potatoes, sliced maybe 1/4 inch thick.
Use paper towels to blot exuded starch/water.
Oil in pan, lay potatoes down. Let them lie like that until browned.
Turn each piece over to get the other side brown.

Easy breakfast potatoes:
Cut red or yellow potatoes into thinnish triangles, spread them on parchment paper in a roasting pan, toss in evoo, salt, and rosemary (I use Penzey's). I roast them at 375 for 30-35 minutes, during which time I prepare my eggs to be scrambled. I shake them in an old Talenti container with salt and a bit of cream (you can substitute water).
Very easy breakfast. I may or may cook bacon or sausage in the egg pan first, then drain, then cook the eggs in the same pan.

French toast is best made with challah or brioche bread.
Hash browns, egg in a hole, bacon can be made easily and perfectly in an air fryer.
A frozen biscuit line called Mason Dixie is wonderful.
Don't cheap out on jams and preserves.

This thread has me going to the kitchen to fix breakfast for dinner. I'm having crisp bacon, sausage links, hasbrowns in the form of tater tots, scrambled cheese eggs, and a slice of wheat toast with strawberry preserves. I eat what I want on the weekends, baby. Here I go...

i had to opt out of my usual egg-based breakfast this morning because my stomach has been cramping up all day long. But tomorrow I'll be doing an omelette with spinach & feta sausage and red/yellow peppers, country potatoes and sliced blood orange. Tea for the drink.
