What's for dinner?

I went on a cooking rampage this weekend and cooked enough food Friday night for the entire weekend.

Bolognese sauce with onions, garlic, mushrooms, ground beef and red wine.

Spaghetti noodles.

Ribeye steak cooked to medium rare to allow for re-heating.

Braised short ribs in red white and tomato sauce.

Shrimp curry with potatoes and carrots.

Potato salad.

Egg salad.

Cut fruit salad.

It took me seven hours to finish everything, but when I was done I was so proud that I had accomplished so much. And I could relax for the rest of the weekend and not worry about what to eat.

I think I'll warm up the braised short ribs and serve it with mashed potatoes. YUM!

My MIL makes homemade pasta. I asked her to teach me this year. It is surprisingly easy. One of my favorite things to do now.

Very nice! I can honestly say I never care about what I'm going to eat. It's not something I spend time thinking about. I'll just grab an apple, make a pbj, order doordash or skip the meal all together more often than not but I respect people who are thoughtful about their meals.

Tonight I was lazy and made Chicken ala King.

Boiled frozen peas and carrots, cream of mushroom soup, pieces of leftover rotisserie chicken, and lots of seasoning.

I also made myself a green salad with tomatoes, onions, hard boiled eggs, bacon bits, croutons, and thousand island dressing.

It was all quite good.

I just finished making a BIG batch of Broccoli White Bean Soup- it's vegan and creamy and very tasty.

The creaminess comes from the Great White Northern Beans. When the whole thing is done I use the immersion blender and I have a tasty, creamy, healthful vegan soup. I'm not vegan or vegetarian- I'm a FLEXItarian.

I made a quick bolognese sauce with ground beef, carrots, onions, and black olives.

Also, made shrimp curry from scratch, as well as a couple of hamburger patties.

I also tried making pan fried chicken, but I over cooked it and it came out tough and dry.

Why is it that I can never cook chicken properly? It should be the easiest thing in the world to cook, but I always mess it up!

Yesterday I made baked lime-yogurt-cilantro marinated chicken thighs ($1.69/lb.!) with roasted broccoli w/garlic, as well as a chunky lentil and vegetable stew I've made a hundred times. I always have a big mixed green salad in the refrigerator, so dinners are easy to heat and serve up. I basically stopped ordering out about ten years ago since I have the time and basic skills. I can cook once or twice a week and have options for a nice dinner every night. It's more planning and shopping than cooking.

(r39) I always rub butter or bacon grease all over the bird including the cavity as well as under the skin. I place the well greased bird on top of some veggies and throw some lemon, garlic and onion inside the cavity. I always use a cast iron skillet and bake at 350F.
