Gingerbread! Like it?

I would never say that I'm a big fan of gingerbread, but I do have the world's best recipe for gingerbread. It is really delicious with either softly whipped cream or lemon curd.

If you like gingerbread and would like the best recipe ever, only say the word!

I will give you a teaser: Instead of using brown sugar, I use a special sugar I infuse with prune essence. For the frosting I pair diced tomatoes with pineapple, and mix with confectioner's sugar. Everyone says it's the best!

When did the world decide yours is the best gingerbread recipe?

I have no idea. But what I do know is that this recipe is delicious.

Have you ever heard of "world's best brownies" or "Famous Roast Beef"? How can they possibly make such claims?

Yes, I've seen those titles on the covers of the Frau magazines at the checkout aisle.

[bold] The Best Gingerbread in the Entire World [/bold]

1 cup sugar

1 cup molasses

1 cup vegetable oil

3 eggs

3/4 teaspoon salt

1 teaspoon ground cloves

1 teaspoon powdered ginger

1 teaspoon cinnamon

2 cups AP flour

2 teaspoons baking soda

1 cup boiling water

----------------------------

Preheat oven to 350

Grease and lightly flour 9"x13" pan (I often use baking spray)

Put sugar, molasses, oil, and eggs in a mixing bowl and beat until smooth.

In another bowl, combine the salt, cloves, ginger, cinnamon, flour, and baking soda. Stir with a fork until well blended.

Stir dry ingredients into the bowl of wet ingredients.

Add boiling water and beat briskly until smooth. The batter will be thin.

Place pan in the oven and bake for 40 to 45 minutes.

Lovely served warm with softly whipped cream or lemon curd.

R12 It's both a cookie dough AND a scuff resistant floor covering!

by Anonymousreply 14October 30, 2021 3:37 AM

I like ginger minge.

Three eggs? No butter? Classic gingerbread always contains butter.

by Anonymousreply 16October 30, 2021 3:46 AM

I like it but haven't had it in years. By coincidence, a boxed mix popped up on the screen when I was making my Amazon shopping list, so I ordered it. It's in my cabinet - plan to bake it tomorrow. Another thing, I've seen lemon paired with gingerbread several times (like the OP mentioned lemon curd) and that combo just seems gross to me.
