Louis as a creole brothel owner instead of a white plantation owner... Hm, I don't know. I mean I get why having a slave-owning rich guy as the protagonist would be considered "problematic" in 2021 BUT, at the same time, it raises the question why bother adapting Interview with the Vampire at all.
Generally, I don't mind them making superficial changes (like the ethnicity of superhero characters). I'm currently in the process of rereading Interview, however, and this will simply change Louis to another character altogether.
If true, I think that the series will have lost me as a potential viewer.

True, but how is being a seller of women's flesh any better in 2021? Louis of the books is austere, reserved, introverted, about as far as you can get from this new incarnation--and that's part of the chemistry he has with Lestat, who's a much more outgoing, rip-roaring personality. Yin and yang.

Part of his appeal was that he was kind and devoted to his family and he oversaw the running of the plantation. Yes, he was tormented by his brothers’ death but that was what drew Lestat to him.
An older Daniel?? Again, WTF? He goes on his adventure with Armand and they become eternal companions. Who wants to be an external companion with an old dude?
The more I’m reading about this the more disappointing it gets. And still, once again, no true adaptation to these damn books. Fuck Anne Rice if she’s the person wanting these changes.

Louis is not a minor character in the first book! He's the one telling the story to the interviewer. There's the whole section of the novel in Paris where Lestat is absent.
Louis is definitely a minor character in other novels. He basically makes an extended cameo in the second book near the end and a few appearances in The Tale of the Body Thief.
Not liking the new version of Louis for the series, but hopefully the actor will be better than Pitt who was dull and inept - he can't play an introverted character at all. Cruise was bad too, but at least he was lively.

Lestat only shows up in the past and he wasn't a vampire for a long time there. Heck, he even had his blind father living with him in the novel. By the time, they'd arrive at The Vampire Lestat and Queen of the Damned, the actor playing Lestat would have matured quite a bit.
