I loved the Hawaiian breakfast at McDonald’s which consists of white rice topped with a scrambled egg, spam and Portuguese chorizo on the side.

R15 Linguiça is a mild Portugese pork sausage (there’s a Brazilian variation also). There are multiple variations on Chouriço/Chorizo/Chorico. There’s a Portuguese style, Mexican, Spanish/French/Italian, Indian, Argetinian, etc. Both Linguiça and Portuguese Chouriço wind up in New England seafood dishes a lot.

There are people that eat this 'bad' stuff at least several times a week. They end up fat and diabetic. Hawaii has had a diabetes problem for years. This plate lunch passion is mainly made up of comfort 'street' foods, and we all know comfort foods aren't known for being healthy. They must be viewed as occasional treat foods. No one eats fried chicken 7 days a week I'm guessing

These days plate lunches come with the option of subbing out white with brown rice, and green salad for mac salad. They offer grilled fish and meats rather than a fried protein.
I looked up that recipe someone posted for the mac salad. It's disgusting, and for my money, it's incorrect. I have never had celery or green onions in mac salad on a Hawaiian plate lunch. Carrots, yes, the other stuff, no. The amount of mayo that goes into mac salad is gross. It's more like slime salad to me. I won't eat it anymore.
Hawaiian cuisine is not bland at all. Yes, it is a fusion, but one of Asian, Polynesian, Spanish, and American cuisine/food. Hawaiian cuisine has become very popular for good reason. It is unique by blending great cuisines, using fresh, local ingredients. Plate lunch food is not our local cuisine. It's just our brand of street food like every other culture has.
Spam was long ago brought in by the military, and it became a popular item in the islands. During WWll spam was easy to get from the military bases.
I grew up, lived off and on in Hawaii my whole life. I currently reside there. I've experienced the changes in food and diet over many decades. Many of the posters here are not giving an accurate accounting of the cuisine. There are still those that want all the fatty crap on their plate lunches. I order the fried things too sometimes, but rarely these days. I treat things like katsu and fried chicken like a rare treat item., not an everyday food.
Visitors come home from Hawaii raving about the food. It's for good reason, it's totally unique, flavorful and it's a whole lot more than Spam, mac salad, and Korean fried chicken or katsu.
