Combine 1 cup of sour cream with 2 tablespoons of dark brown sugar and 2 tablespoons of Cointreau liqueur. In champagne flutes, layer blackberries and raspberries with layers of the Cointreau cream. Top the with a dab of the cream and a mint sprig.
Foolproof simple, and great tasting.

R38 here. This isn’t a photo of the exact recipe, but is similar. The Cointreau one I described is more fruit - but just 2 types- and less Cointreau cream. But it gives you the idea. Added plus is that dinner guests who don’t eat dessert usually accept this as it’s mostly fruit.

I would say creme brulee (or burnt creme). I'd love to try a Pavlova. American here, I have a feeling it's considered rustic in Australia and NZ.

I was going to say Pana cotta too. Most of the desserts on here are complicated to make. Let’s think of easy things.
One thing I like that is easy is strawberries with sweetened mascarpone cheese in a pool of chocolate sauce. Super easy to make. Sweeten the mascarpone cheese with powdered sugar or honey to your liking. Slice of the strawberries you can do them kind of fancy if you want. To make your own chocolate sauce slowly melt milk chocolate chips with heavy whipping cream and a little bit of vanilla extract. Super Duper easy!

R76 here, I forgot to mention Syllabub, which is also somewhat similar to Zabaglione though it's made with cream instead of egg yolks. A guy I went on a date with made this for me when he invited me over for dinner. Though IIRC his was kind of layered, it sorta looked like Jello 1-2-3, there might be different ways of preparing this. He was big into Medieval stuff.

Semifreddo seems classy, in a loaf / molded like that.
Any dessert where each person gets their own little serving (vs. cutting into a large cake, pie, etc.) is classy. E.g., creme brulee in ramekins.
