I agree, but pastor is my favorite kind that doesn't involve seafood. A Honduran food truck a few blocks from me makes incredibly good ones.
I've tried lengua and cachete tacos and found them inferior to basic asada and pastor ones, though. Not sure why people from south of the Border set such store by those varieties—you're paying more money for less tasty food.

I love seafood tacos and barbacoa tacos, in addition to al pastor. Not into lengua but my brother-in-law (gringo who grew up in Texas) thinks it's more tasty than basic asada, etc. I think it's a matter of what you're used to and have cultivated a taste for.

Looks delicious OP. I just made Tejano Carne Guisado last night. Don't laugh, as the recipe IS from a Karen.
There seems to be an extra amount of sauce, so I took some and added some cooked chickpeas, corn, and black olives, for another dish. Almost like a Mexican Chana Massala! I served with some raw onion and coriander leaves.

I don't object to trying the tongue (it's muscle meat after all, and the version I got was pretty finely chopped so there weren't any obvious texture differences from other beef varieties), but it didn't live up to other people's enthusiasm for it. Same with pork cheek, which I've also heard good things about.
Now tripe they can keep far, FAR away from where I'm eating. That's barely more palatable than chitlins in my book.

Cabeza means melon or head, so I doubt it. The Honduran place where I tried them called them cachete tacos. They weren't bad, but the pastor blew them away.

R55, the last time I tried lengua tacos, I thought the meat had a somewhat gamy taste compared to beef and much stronger than pork.
Tongue is not limited to Mexican food. It used to be a staple in delis, back when real delis were common. My father liked it, but I never did. The name alone is bad enough, but having seen it in the deli counter, lying there, looking like a tongue, it's hard to get the image out of my head.

R57, thanks. I looked it up and cabeza refers to beef head -- which I don't know what fatty part of the head the meat is from -- but they're very good.
