R1 - you should try a good biftec biftec tartar. I personally find raw fish and beef to taste better and somehow cleaner than cooked.

It also seemed to be a thing within the higher income gay community in the 1990's. My late partner's colleagues and friends all knew or were learning to make sushi. It kinda died out since then. James and I were always praying we didn't end up in the ER because we had to eat some to be polite.

The very first time I ate it as a teenager, I didnt 'get' it. Now I love it. Strange how your palate can change over time. I love yellowtail.

R8 - yeah I hear a lot of people say that. Personally, the first time I ate it I was like, ok, not too bad but then, after I ate it, I stopped being able to eat cooked fish with a few exceptions (my salmon with lime, smoked paprika, and topped with a guacamole with cilantro and sea salt is a favorite) because it smelled like you know what when it was cooking. Now, I eat sushi, smoked salmon, roe, cooked sea bass and salmon only. Go figure.

I always order unagi when I'm out for sushi, but yellowtail and red snapper are great as well. I also love a good spider roll.
One of my friends introduced me to the concept of inari as a "dessert" bite toward the end of the meal, and it does work well at finishing the meal with a bit of sweetness.

R11 - that inari sounds amazing. I will try it. I was pretty surprised to see they have a small Japanese community here in the city I work in Romania. My roommate and I ordered spicy tuna, salmon, roe (which is incredibly good in Eastern Europe), and tuna and yellowtail. I was freaked out and let her eat it first and after she was ok I ate it too. We joke that it is sort of a Middle Ages taster for the king situation. If she died, I wouldn't eat it.
The best sushi I have ever had was in Los Angeles at a place James and I would go to in Glendale called Tokyo that has since closed down. We would stuff ourselves at the bar, drink Sapporo and go home and fuck.

I never wanted to eat those shrimp heads. Then, once I tried it, I really liked them.

Eel (anago and unagi) is popular, I think b/c of the teriyaki sauce. Plus, eel is served cooked. Eel texture reminds me of catfish texture.

Here in Portland, there's a sushi place, Yoko's, that serves a dish called Taka's tuna. It is a pile of spicy tuna served on top of sliced avocado and a small patty of fried rice. It's unwieldy for sushi, but the combination of flavors and textures is amazing.

I tried Sasabune, omakase (prix fixe). My friend & I sat at a table, but I could see the sushi bar from my seat. There were 2 or 3 sushi chefs making sushi and one guy was obviously the boss. He was staring me down and acting like a sushi Nazi.
I like food kind of salty, whether it's sushi or something European. The server was giving us instructions to not add soy sauce to most of the courses and, also, to eat things in one "bite." I went ahead and dipped in soy sauce and ate things in two bites, anyway.
Also, I'm a pretty quick eater, but the courses were coming out at lightning speed.
The flavor of the food? For all the reputation, I was disappointed.

If I were ordering for myself, I would stick to salmon and red snapper, personally. Eel would be my least favorite - those things are ugly as hell. But I was surprised at how sweet it was, might have been due to how it was prepared though.

I like different kinds of mackerel (sushi, called saba) a lot. Usually, it's cured. Yes, it's oily and I guess you could say fishy, but I really like it.

I love sushi, that wasabi-and-sweet-vinegar-seasoned rice is right up my alley. Fish-wise I love tuna and also enjoy red snapper, escolar, mackerel, and salmon, though I really prefer the last cooked as a bento box entree. Also uni if I'm near a coast and it's fresh, though it's not that impressive in Memphis (the nearest place to me where it's available). I tend to like complex mixes of flavors in rolls rather than the simple nigiri approach, though.

If the chef can’t make decent tamago, don’t trust anything else.
My faves are otoro (fatty like butter), ikura, hokigai, uni, amaebi, and soft shell crab rolls. If you ever get a chance to try ankimo (monkfish liver), it’s divine. .

On "Jiro Dreams of Sushi," Jiro says (IIRC) that he prefers tuna that's not very fatty. But he acknowledges that most people prefer the fatty tuna.
