Yes R16, I used to be overweight and prediabetic. 5 years ago, I lost all the weight and reversed the preD. Now that I am slim and healthy again, I am very strict about sugar/calories.

I want jelly roll. Does that count as cake? It's hard to find nowadays. I want the kind with a jelly-coconut icing along with the jelly in the roll. I've considered trying to make it for myself, but it sounds hard. I've never baked a cake or cake-like food that seemed as though it could be rolled up without cracking.
Has anyone made their own jelly (aka Swiss) roll?

I've made a swiss roll but it was chocolate with cream filling.
I wouldn't begin baking by taking on a filled cake roll. It's difficult to master.

Thanks, R22. I do bake sometimes, including cakes. I only meant to say that I've never baked a cake that seemed like it could be rolled without breaking. In the meantime, I wish you could still get jelly rolls at US supermarkets. They used to be ubiquitous.
I suppose I could make a layer cake with jelly instead of frosting, adding coconut to the jelly for the top of the cake.

I haven’t had a jelly roll in decades. My mother used to buy them at the grocery store in NY where I grew up. And, yes, with the jelly and coconut “frosting” — for lack of a better term.
My mother was an excellent baker. I don’t recall her ever making a jelly roll, but she did what you suggested: filled the layers with jelly.

R20, If you have a Japanese grocery or bakery near you, the roll cakes are popular. I've not seen a jelly roll, though. My favorite would be the green matcha cake with green filling. Strawberry is the other popular flavor.

I bought a King Arthur's Flour cookbook last winter. It has a recipe for Cherry Almond Crumbcake. It sounds FABULOUS. It has lots of butter and Almond Paste. I've been procrastinating about making it. I really do want to have my cake and eat it too.

My favorite cake is Italian Rum Cake, frosted with whipped cream, layered with custard, strawberries, peaches and soaked in rum. When I was growing up you could get them in any Italian bakery in the Boston area. No more. Wish I had a piece right now.
