Much of "Ice Castles" was filmed there.
A terrible comedy from 1980 with Gary Busey and Cloris Leachman called "Foolin' Around"--the climax involves Busey crashing a wedding by flying a hangglider into the St. Paul Cathedral's gigantic Rose Window. The special effects are awesomely horrible and unconvincing.
"Dear White People" was filmed there, even though it is supposed to be set in an Ivy League college in New England (there are bizarrely jolting shots of St. Mary's Basilica, which is absolutely enormous, in Minneapolis in the background while two characters talk on a rooftop).
The Coen Brothers' "A Serious Man" was largely filmed in Bloomington, the largest suburb of the Twin Cities (where the Mall of America is). Several parts of "Fargo" also take place in the Cities (such as the scenes at Jerry Lundegaard's auto dealership, the kidnapping of his wife in the tony Western suburbs, and the lunch Marge has with her mentally disturbed classmate), although most of it takes place in the town of Brainerd upstate.
Although "Purple Rain" is supposed to take place in Minneapolis, much of it was actually shot in the Los Angeles area, particularly the outdoor scenes.
Lots of "Jingle All the Way" was also filmed there, especially in the suburbs.

None of the first Grumpy Old Men was actually filmed in Minneapolis proper. There are a few scenes filmed in St. Paul, but most of the movie was filmed out of the Twin Cities (as befitting its small town setting).
There are a few scenes in Grumpier Old Men (the sequel) filmed in Minneapolis, though.
