I liked a good sharp better baked into the crust. I think it's nauseating to put a slice on it, especially when it looks like the slice in OP's photo is Kraft American cheese (ewwwwww...).

Honestly, the first time I ever saw it done was as a kid watching Golden Girls and Dorothy was putting cheese on the apple pie for the homeless people. And I thought "Is that Kraft Singles? Ewww." I've never known apple pie with anything but a scoop of vanilla.

I love it that way. You shouldn't be using American style cheese though you want a nice farm style Cheddar. It also helps if the pie is not too sweet and uses nice tart or tangy apples, and is warmed just slightly.

Raised on a farm in southern Saskatchewan it was always apple pie with cheddar.
Real cheddar,not Kraft plastic singles.
Ancestors were all Scots immigrating to Ontario starting 1780.
No refrigeration so it was cheese and not ice cream.

Many years ago Lord & Taylor had a counter-only restaurant on the tenth floor called The Soup Bar where they served apple pie with a slice of cheddar cheese on top. Having been raised in California I had never seen such a thing. After one bite (well, maybe two just to be sure) I surreptitiously scraped the cheese off and ate the pie. Then, because I was so intimidated by the tough-gal waitress, I ate the slice of cheese by itself.

It's a southern or maybe hillbilly thing. My dad liked cheese on his pie well enough but he preferred buttermilk poured over his apple pie. And he couldn't stand store bought cheddar, but grocery store cheese wasn't very good back when he was still around. He said homemade cheese from a farm tasted the best.
I never had it but in retrospect it sounds a lot like a cheese and fruit dessert plate, which I love.

This was the only way that my grandfather ate any fruit pie (blueberry, blackberry, strawberry, etc.) and he was very Southern (Georgia). I tried it as a kid and didn't care for it at all - but I wonder if I would think differently as an adult. The only issue now is that I hate fruit pies as a rule.

It seems like a natural fit if you're from a part of the country or world that has a lot of apple orchards and is a dairy state. New York fits that profile. We always had cheddar cheese with apple pie and it's as natural a combination as any fruit with any cheese and bread. Pear and brie on a cracker? Not much difference. I don't see it too much in my part of the world now, but I did love that flavor combination.

It's a THING in many cultures. I'm Scandinavian, grew up in a small northern town in the Midwest and it was served that way if we wanted it. Grandma used to put warm half and half over sliced apple pie too, besides a la mode.
I don't think it's strange. To go off topic, what I do find strange is saltine crackers dipped in coffee as a snack. We were started on coffee from the time we could eat, and it was a treat to sit down and dip the saltine crackers in our coffee. I gag thinking about it now, but my older relatives still do that.

I tried it once and it seems like a good fit for the current fad for sweetness and saltiness together. Ice cream wouldn't have been around much before the spread of modern refrigeration/freezer technology. My guess is that a restaurant must have started the practice of putting ice cream on pie because they would have had freezers before most ordinary homes did.

Speaking of cheesecake, we got a Cheesecake Factory cheesecake for the holidays, and those things were 54% sugar, literally. You could hardly taste the cheese in them.
I prefer something like Junior's where you can taste the cheese and it's not overly sweet. That makes me think I'd probably like cheddar at least in the crust of an apple pie, something savory to cut the sweetness. I'm going to try it before it gets too hot to bake.

A lot of things from those older generations are gross, mostly the European shit like pickled eggs, Limburger cheese sandwiches, liverwurst, buttermilk, etc. They’re all fart and halitosis-inducing but back then people didn’t care, they needed the protein to work hard and survive.

I was in high school when I found out Parmesan cheese didn't come in a green metallic cardboard can. My friend's sister's boyfriend was about to go to Vietnam, so we made him a going away dinner. I made the meatballs and my friend's sister introduced me to real Parmesan (though I don't think it was Parmigiano-Reggiano. That came later still). I got to grate some to put in my meatballs.

R101, what is your issue with these foods? I love pickled eggs and make them regularly. Liverwurst is great, as is buttermilk (I use it more for cooking) . No GI problems or halitosis, either.
My family still enjoys apple pie with cheese, usually cheddar or Gouda. I'm another who prefers just the apples plus cheese.
