Can You Use Canned Chili in A Chili Cookin' Contest?
I was making some chili for my husband when my mother-in-law said her chili was the best. So we decided to have a contest. Then somehow my old maid neighbor lady also wanted to join in. She fancies herself a cook but she is just ugly.
Anyway we were about to start cookin' when they tell me I can't use canned chili. I am like, "what the fuck? it's my main ingredient."
So I decided to let the DL be the judge. I know I'm right, so you all vote on it. Oh and I'd appreciate it if a few of you would vote for my mother-in-law just so she doesn't get humiliated totally from being wrong.

I use it as starter. I also add a lot of other stuff because you can't just use canned chili to make chili.

OP, use the chili beans in gravy. I buy Bush's Chili Hot Beans. Usually add two cans to my own basic chili recipe.Oh.And put a bit of brown sugar into the chili when you're almost finished cooking it. You'll win.

Fresh ground beef, no canned stuff. I don't mind the canned stuff on something basic like chili dogs, but not in home made chili - especially if it's for a contest.
That said, it's not beneath me to use a pre-mixed packet of McCormick Chili Seasoning as a base to my chili. I look at it this way, the spices are going to be fresher than what I've got sitting around in my cupboard at any given time. And the particular blend and ratio of the spices in the packets are generally what I would have used any how. My only gripe is that they include wheat flour as a thickener, though it's not a main ingredient.
Oh and I always rinse my beans - not a fan of the gloppy liquid they come packed in.

When I was younger I made the mistake of eating a can of Hormel Chili for lunch. Without going into detail I can tell you I never did that again. That stuff is meant to go on hot dogs by the spoonful, not in a bowl as a meal. *shudders*

I'm friends with an eldergay couple who make chili using homemade meatloaf. But it wasn't just any meatloaf, it's made with turkey thighs that they grind themselves into large chunks instead of finely ground meat. They chop up the meatloaf and throw in canned beans, molasses, canned chopped tomatoes, assorted seasonings (heavy on cayenne powder), fresh peppers, onions, and some other vegetable I can't remember. But instead of using a lot of salt they mix in some miso paste for the umami flavor, you can't taste the miso flavor at all.

It's different, using ground meat, r19, but I have this damned smoke alarm that goes off when I sear chunks of chuck. I find using ground meat a much less stressful way to make chili, but I do appreciate the aficionado difference. More important, I like the chili I make with ground chuck.

Does anyone else put sausage in their chili? Sometimes I do turkey or ground beef. I also put lots of onion, garlic, peppers, chili and usually a can of crushed tomatoes or sometimes paste. I like black or pinto beans. Corn is a sometimes addition.

I remember the first time I ever cooked chili. It was for my first husband, Tommy Lee, I was 17 years old at the time.....Ever since then every new man in my life has inspired a new ingredient. Rick just loved his beer nuts, Leonard was a fanatic about beef jerky, and George was a real frito freak.

I side with OP. The main ingredients in my award-winning chilli are Wendy's chilli, Digiorno frozen pizza food processed (thickens and gives body to the chilli), and chopped Slim Jims. I start by sautéeing a bag of frozen mixed Italian vegetables for that homemade and hearty taste.

I think as long as you are honest and own up to the addition, no harm no foul, though I adore R13 and her chutzpah! Reminds me of a rugby meatloaf cook-off, (mostly lesbians on the team) and the contest winner had procured and entered a store-bought loaf. She couldn't cook to save her own life, but was bright enough to recognise it.

As I said earlier, I'd never use canned chili (especially the kind with meat in it. Canned ground beef or "steak" is gross. But I have used Bush's Chili hot beans in sauce as part of my starter and it really tastes good when you add other stuff. I usually use three or four different kinds of beans. My chili always gets raves and no, I will not share the recipe.

If you want it to parallel the classic Mexican dish of chile (spelled that way) colorado, it should just have chunks of beef or pork, and a red sauce made from chiles and other spices. No tomatoes.
