Why does everyone LOSE THEIR SHIT about Asian noodles as if they're magic? Noodles are noodles, spaghetti is spaghetti! There are the same three ingredients. Wheat, salt and water. I don't get it?

For anyone who's interested in ramen that's a little step above the normal, maybe try this Black ramen (Nongshim brand). It's not as spicy as it appears on the package. Get the one in the square pack, though. Not the one in the cup.

Vietnamese eggroll salad - Lettuce, cold noodles, Vietnamese eggrolls, cucumber, ground peanut, fried shallots, cilantro, mint or Thai basil served with fish sauce. There are are several variations depending on the restaurant.

I like ho fun with beef but I prefer the noodles to be fresh and not dried. I also prefer the noodles to be fried as opposed to "topped" with sauce so they have a drier texture. ...And I like it with gai lan or some kind of tsoi included.

R31 yes there are varieties and regional variations (asia is a big place with 5000 years old civilizations) but asian noodles are mostly and traditionally made of rice so R30 is essentially correct.

R49, you're wrong about noodles being mainly and traditionally made of rice. Yes, rice noodles is one of the more popular variation of noodles but note "one of", meaning there are other variations that are eaten by a whole lot of people. You think rice is the carb of choice for people northern and western China? Even in Japan where is rice is eaten in all regions of the country, rice noodle isn't remotely the the main type of noodles.
If you had narrowed it to, say, Vietnam, you would be right but it's not true for Asia. The variations alone for one country like China, means rice isn't mainly and traditionally the grain used for noodles.

Yes, most of us love them - not much different from pasta really (some Asian varieties are rice and others are grains, etc.). I can't imagine a world without Italian or Asian food, but let's face it - lots of grilled meat and salad are my primary food groups. These delicacies are really "fun" meals - much like pasta and pizza. Most of us can't have a toned stomach if we eat noodles for every meal.

This is the Pad Thai recipe I made and it came out excellent. In fact, I've made a couple of recipes from this site, and they're all solid. Pailin really explains everything and takes the mystery out of Thai recipes. Just having access to the right ingredients is the toughest part.
