Why does everyone LOSE THEIR SHIT about Asian noodles as if they're magic? Noodles are noodles, spaghetti is spaghetti! There are the same three ingredients. Wheat, salt and water. I don't get it?

by Anonymousreply 4April 21, 2019 10:16 PM

The sauce, R4, the sauce.

Has anyone used asian noodles to make pasta? Did you drain them?

by Anonymousreply 11April 21, 2019 10:37 PM

I could eat all Asian food every day.

For anyone who's interested in ramen that's a little step above the normal, maybe try this Black ramen (Nongshim brand). It's not as spicy as it appears on the package. Get the one in the square pack, though. Not the one in the cup.

Vietnamese eggroll salad - Lettuce, cold noodles, Vietnamese eggrolls, cucumber, ground peanut, fried shallots, cilantro, mint or Thai basil served with fish sauce. There are are several variations depending on the restaurant.

I like the Thai noodles -- pad kee mao.

by Anonymousreply 24April 22, 2019 7:08 AM

by Anonymousreply 30April 22, 2019 10:14 AM

R30 you are full of shit.

Asian noodles are made of rice, wheat, buckwheat and many other things depending on the region and the noodle.

I like ho fun with beef but I prefer the noodles to be fresh and not dried. I also prefer the noodles to be fried as opposed to "topped" with sauce so they have a drier texture. ...And I like it with gai lan or some kind of tsoi included.

by Anonymousreply 48April 22, 2019 10:06 PM

R31 yes there are varieties and regional variations (asia is a big place with 5000 years old civilizations) but asian noodles are mostly and traditionally made of rice so R30 is essentially correct.

by Anonymousreply 49April 22, 2019 10:54 PM

I don't enjoy Asian noodles. I find them too limp and stubby.

by Anonymousreply 50April 22, 2019 10:59 PM

R49, you're wrong about noodles being mainly and traditionally made of rice. Yes, rice noodles is one of the more popular variation of noodles but note "one of", meaning there are other variations that are eaten by a whole lot of people. You think rice is the carb of choice for people northern and western China? Even in Japan where is rice is eaten in all regions of the country, rice noodle isn't remotely the the main type of noodles.

If you had narrowed it to, say, Vietnam, you would be right but it's not true for Asia. The variations alone for one country like China, means rice isn't mainly and traditionally the grain used for noodles.

by Anonymousreply 57April 23, 2019 8:48 AM

what is the name of the dish at OP?

by Anonymousreply 58April 23, 2019 8:50 AM

Yes, most of us love them - not much different from pasta really (some Asian varieties are rice and others are grains, etc.). I can't imagine a world without Italian or Asian food, but let's face it - lots of grilled meat and salad are my primary food groups. These delicacies are really "fun" meals - much like pasta and pizza. Most of us can't have a toned stomach if we eat noodles for every meal.

by Anonymousreply 59April 23, 2019 9:04 AM

Asian noodles are boring and mushy usually. No flavor on their own, you have to mask that with other add ins. Full of carbs, not good for you either.

by Anonymousreply 60April 23, 2019 9:20 AM

R59 tell Italy. Bread and pasta are staples and I see a lot more lard asses in the US.

Believe it or not, I watched while a friend of mine from Thailand made pad Thai. She did squirt in a little bit of ketchup. Not a lot, though. Maybe a couple of tablespoons, at most.

by Anonymousreply 68April 23, 2019 6:01 PM

I've been to thailand and everything had lime juice, cane sugar and fish sauce. no ketchup anywhere

by Anonymousreply 69April 23, 2019 6:19 PM

This is the Pad Thai recipe I made and it came out excellent. In fact, I've made a couple of recipes from this site, and they're all solid. Pailin really explains everything and takes the mystery out of Thai recipes. Just having access to the right ingredients is the toughest part.
