A friend of mine makes wonderful gumbo! She uses homemade chicken stock as well. I’ve had her chicken and sausage gumbo and also seafood gumbo! Both are excellent!

Yes. My Cajun grandmother spoiled us with fresh seafood. I remember going down to the docks to buy fresh shrimp with her. And our family loved fishing and crabbing, so we had plenty of gumbo, etouffee, boiled crab. But I didn't have non-seafood gumbo until I was an adult. A roommate made duck and sausage gumbo for us: divine. I hate chicory coffee, though. My grandmother loved French Market coffee, which I loathe.

I've only had crawfish "in a bag," but it was at a Vietnamese restaurant. I don't know if that's the same style as Cajun. It was.. interesting.

To a degree, there's a reason why they're huge fatties down there. It's not a cuisine that's healthy nor particularly appetizing because it's so heavy on fattening ingredients.

Creole cuisine is better, think etouffee, Shrimp Victoria, gumbo. It's not the same thing. Cajuns eat shit like boudin balls and nutria.

I went to a Mardi Gras party last week at a cousin's house. His wife is from New Orleans. Holy shit was it good.

Homeade cracklins on hog killing day. Everybody had jobs and no parts were spared. Each person had a role to play and we had fun being together. We ate what we grew and fed acorns to our pigs a week or so before we slaughtered them for perfect flavor. The pork tastes so different than the lousy tasting meat at the grocery. The fresh pork loins and various rice dressings made with the pork fat saved from roasting meats were savory and delicious. We fried catfish we caught outside on a wood fire. We had outside kitchens where momma and her sisters would gather and put up vegetables for the winter months and shared when we ran out.. Pork chops stuffed with oyster dressing Grimille Gumbo Backbone stew Momma's Courtbouillon Bread puddings chicken fricassee Sweet potatoes cooked every way imagined Shrimp stew Grilled gaspergou My momma's dressing-farre pain perdu All these are my favorites
