Are you a fan?
Yes, I miss New Orleans.

Yes!, but am not a fan of anything else in or about Louisiana. It’s a shithole.

I had Shrimp Etouffee for lunch today as a matter of fact.
by Anonymous | reply 3 | March 4, 2019 2:36 AM |
Yes. I was sad when I moved to the Northeast and discovered cajun food isn't readily available there.

Oooh yes. I love my creole everything. I always have file handy and some okra in the freezer. Mmm.

A friend of mine makes wonderful gumbo! She uses homemade chicken stock as well. I’ve had her chicken and sausage gumbo and also seafood gumbo! Both are excellent!

Yes. My Cajun grandmother spoiled us with fresh seafood. I remember going down to the docks to buy fresh shrimp with her. And our family loved fishing and crabbing, so we had plenty of gumbo, etouffee, boiled crab. But I didn't have non-seafood gumbo until I was an adult. A roommate made duck and sausage gumbo for us: divine. I hate chicory coffee, though. My grandmother loved French Market coffee, which I loathe.

I've only had jambalaya. I liked it though.

I live everything except for crawfish. Don’t know why people like crawfish anyway .
by Anonymous | reply 9 | March 5, 2019 4:25 AM |
Yes, I love her some Popeye's hunty child.

I've only had crawfish "in a bag," but it was at a Vietnamese restaurant. I don't know if that's the same style as Cajun. It was.. interesting.

It's very intense, flavor-wise. And it's heavy and kind of greasy.

I live in New Orleans and Happy Mardi Gras......................ahhhh the Bourbon Pub balcony
by Anonymous | reply 13 | March 5, 2019 4:48 AM |
This is what authentic "Cajun cuisine" looks like.

That there is good eatin’ R14!

I’m eating at a Cajun place tonight. No possum on the menu though. Crawfish etouffe.
by Anonymous | reply 16 | March 7, 2019 11:05 PM |
To a degree, there's a reason why they're huge fatties down there. It's not a cuisine that's healthy nor particularly appetizing because it's so heavy on fattening ingredients.

I love it when it’s not five-alarm-fire spicy. Never understood having your mouth on fire.
by Anonymous | reply 18 | March 7, 2019 11:26 PM |
Creole cuisine is better, think etouffee, Shrimp Victoria, gumbo. It's not the same thing. Cajuns eat shit like boudin balls and nutria.
by Anonymous | reply 19 | March 7, 2019 11:33 PM |
Is there any other part of the boudin you can you eat?
by Anonymous | reply 20 | March 7, 2019 11:40 PM |
It's crawfish boil season. Can't beat attacking a table-full with friends.

I went to a Mardi Gras party last week at a cousin's house. His wife is from New Orleans. Holy shit was it good.

Homeade cracklins on hog killing day. Everybody had jobs and no parts were spared. Each person had a role to play and we had fun being together. We ate what we grew and fed acorns to our pigs a week or so before we slaughtered them for perfect flavor. The pork tastes so different than the lousy tasting meat at the grocery. The fresh pork loins and various rice dressings made with the pork fat saved from roasting meats were savory and delicious. We fried catfish we caught outside on a wood fire. We had outside kitchens where momma and her sisters would gather and put up vegetables for the winter months and shared when we ran out.. Pork chops stuffed with oyster dressing Grimille Gumbo Backbone stew Momma's Courtbouillon Bread puddings chicken fricassee Sweet potatoes cooked every way imagined Shrimp stew Grilled gaspergou My momma's dressing-farre pain perdu All these are my favorites

Too much salt and cholesterol.
by Anonymous | reply 24 | March 7, 2019 11:57 PM |
Looks good. I've only had it in LA (not Louisiana) and I don't think it was very authentic.

No..

I love Popeyes - and I don’t even need to leave the Northeast.
