I love cheese. My kids love it. We eat a TON of cheese in our house. Cheddar, feta, fresh mozzarella, Monterey Jack, emmenthaler, Maytag blue, Cotswold.
We also do American. Land O Lakes is the best fake cheese; it has a little tang that makes it better than any other American. There’s nothing better for grilled cheese. I won’t do the Kraft singles, though.

I just recently started eating cheese. My supermarket stocks a Bellavitano Balsamic cheese (by Sartori in Wisconsin) and it is heaven when soaked in some balsamic vinegar. We eat a lot of cheddar. Other popular cheeses are Havarti, St.Andre, and Manchego.

I've never understood why people insist on buying commercial cheese. Yes, of course, European styles are irreplaceable and if you need Parmesan or Roquefort or Stilton or any of the other famous cheeses, you have to go to the source. But making cheese is so easy, and anyone with a house and yard can raise a ewe or a nanny or two (or even four) for the milk. Or you can find a local source for quality raw cow milk. The process is not difficult and if you follow the steps you'll get the hang of it. We make three kinds for our daily use and wouldn't think of buying Kraft or whatever else people are eating nowadays.
Don't be lazy. You probably buy your yogurt, butter and bread, too. Tsk.

I love cheese but my boyfriend buys it all so I have no idea what any of them are ever called. I was raised in a Velveeta sort of household and never developed much of a palate until later in life and so I've been surprised to discover I have a taste for extremely stinky cheeses. The stinkier the better! I think there might be a secret fancy person buried under my rough-hewn exterior, like I'm actually the Hick Bette Midler Twin in Big Business.
