Love it! Delicate and intricate flavours. (I know that sounds wanky but yeah). Unfortunately there are few Viet restaurants offering vegetarian dishes on their menus so I haven't had Vietnamese food for ages.

Adore it. Vermicelli bowls, hot and sour soup, pho, cold shaved beef, curry coconut chicken, lemongrass beef, bok choy, banh mi sandwiches. I could eat it twice a week.

r13 - there is a hot and sour soup in Vietnamese cuisine as well (different than pho). Full of fresh vegetables and herbs, and usually a protein (chicken is the most common). Often has chunks of pineapple and tomato in it. Amazingly good.

R22, actually the most common protein for Vietnamese hot and sour soup is fish, primarily catfish. If you're familiar with the soup served with chicken--I wonder if there was some Chinese influence? My background is Chinese-Vietnamese and my mom would cook the soup with chicken. But in restaurants and many Vietnamese homes, it's catfish. I've never seen it in a restaurant served with chicken.
I used to follow my mom's recipe but now prefer it with catfish or shrimp.

R13, u can think of Vietnamese as regional Chinese as the influence is undeniable. Just like the various regions in China use different ingredients indigenous to those respective regions, Vietnamese is basically the same.

I live in Nashville, and can name four Vietnamese restaurants off the top of my head. When I first tried to go to one several years ago, there was nothing vegetarian in any of them. In the last year or so, though, a few have added vegetable versions -- without fish sauce, even -- and there's one in particular that I go to fairly often. The food is incredibly fresh and delicious. If I had to say what the difference is between Vietnamese and Chinese food is, I would say that Chinese food tends to have all the ingredients mixed together, whereas Vietnamese food tends to keep the ingredients separate, so you can enjoy each flavor. The latter is also much fresher and less greasy.

I love the cold spring rolls (Gỏi cuốn), sometimes called salad rolls or summer rolls. Served with either peanut sauce or hoisin sauce with chopped peanuts.

R2 - the fish sauce is normally in a bottle on the table and you don't have to touch it. It's not normally mixed in with the food before it's served to you.

r18, you're right. I've had it with catfish too. The best thing for a cold — even better than Jewish chicken soup.
I can't remember the Vietnamese name for the cold beef salad sliced razor-thin and served with razor-thin lemon slices, chopped onion and herbs — bo tai chanh? Is that right?

i could eat banh mi (specifically with the baguettes used at Lee's Sandwiches) practically every single day if my bowels could handle it (tmi) i'm not the biggest fan of pho or vermicelli but when i'm in the mood i will beat down senior citizens to get to a viet restaurant.

I imagine all Vietnamese food here is from the south. What's the north like? Both were great as I vaguely recall but that was before I became a foodie. I do remember an open air banquet on the banks of the Mekong though. It was nothing short of amazing.
